Roasted Brussels Sprouts & Baby Greens Salad (Sponsored)

Halloween is almost upon us, and that means that the rest of the major Holidays are going to follow there shortly after! I'm so excited for the upcoming Holiday season, but I've got to say that as usual I'm already planning and stressing out over it all.

It comes with the territory, what can I say?

We're always busy around here hosting family and going to all the fun holiday events that they have around my great city. It's always so much fun, but a very chaotic time for everyone I think. Somewhere between getting little ones off to school, working, decorating, shopping, and holiday events, a better-for-you dinner can get lost in the mix...

Skinny Buffalo Blue Cheese Deviled Eggs

October 12, 2015 Amanda Plott

This stuff right here is what dreams are made up of. I've a southern girl, so deviled eggs are a staple to any holiday or 'special event'. Instead of the same ole' same ole', I love to play around with different combinations.

My last adventure with deviled eggs was quite a big hit, so I decided to try my hand at it again. This time though, I wanted to make my deviled eggs 'game day friendly'. How do you make something more game-day inspired than to throw buffalo sauce at it and call it a day?

Plus, their orange and white just like the colors of my favorite local college football team. Hook'em!...

Skinny Pumpkin Pasta Skillet

October 10, 2015 Amanda Plott

Pumpkin, pumpkin, everywhere! It's that time of year when pumpkin spice and everything nice has once again taken the world by storm, and I love it. I wish the weather was this nice and pumpkins were admired year-round.

Seriously. I'd be one happy girl if it were fall all the time.

This recipe is entirely pumpkin and fall inspired. It's full of creamy pumpkin goodness which is an amazing alternative to some of the more creamy heavy cheese loaded sauces that you come across all too often. This dish is hearty without being overly rich or heavy...

Vegan Spinach & Artichoke Dip

September 8, 2015 Amanda Plott

Not only can plant-based diets be good for people and better for the planet, but they taste amazing too! I've been working with my own family and our diets, eating less and less meat each week it seems. So, I'm taking the #MeatlessMondayNight challenge to spark real change.

Adopting a more plant-based diet can start with making a change just one day a week – so why not start by sidelining meat during Monday Night Football games this season?

One of my favorite dips in the world is spinach and artichoke dip. I had a great recipe for it years ago that I kept tucked away even though I haven't made it in a while. Today I decided to take that recipe out, dust it off, and give a good dairy-free once over...

Cilantro-Lime Coconut Rice

August 14, 2015 Amanda Plott

Let's see... the first time I had cilantro-lime coconut rice was quite a few many years back now. Right about when I first started getting into cooking. As far as I can remember, my mom and I were trying to come up with a rice to go with a Thai inspired dish that wouldn't be quite so traditional.

I remember that I was more than a little apprehensive because coconut is not one of my favorite flavors and I hadn't yet really been exposed to the wonderfulness that is coconut milk. My attitude towards coconut started to change with this rice right here.

One of the great things about cilantro-lime rice is that it can pair well with almost any Asian, Thai, or even Indian style dish. Yes, I've been known to sneak it in with a Mexican style dinner as well, though I usually leave the coconut milk for that variation!...

Skinny Mexican Style Caprese Salad

July 21, 2015 Amanda Plott

I've been in love with caprese salads for a long time now. I think that my love of them actually started some years ago when I worked as a waitress in a newly opening restaurant when I was visiting home for the summer one year from college. It was a horrific experience, but only because I am not good at the whole waitressing thing. That job takes a very skilled and specific type of person to do properly. And I am not skilled or specific to customer servicing!

It did give me an entirely new perspective though on restaurants and I have always had another level or respect for those that wait tables.

Anyway, the restaurant had a caprese salad and I felt like eating vegetarian that day; plus, I mean... I got half off meals and they had great food there so I was pretty set on trying almost everything on the menu. It was love at first bite...
