Skinny Italian 'Fire Sticks'

Here is another healthier take on a favorite 'take-out fake-out' or restaurant 'copy cat' kind of recipe. There's this chain Italian style restaurant that serves these amazing 'Sicilian Fire Sticks' (or at least they used to the last time I went there - well over a year ago now.) They were always one of my most favorite things to order.

These fire sticks are large and in charge and full of flavor. And considering that one of my complete fire sticks is less calories than the original restaurant's tortilla alone... I think I'll stick to staying at home and making these for myself.

For those of you that aren't familiar with what a fire stick is, it's basically an Italian version of a flouts or taquito. A crispy tortilla surrounding a yummy mixture of meats, pepper, and melted cheese...

Skinny Cinnamon Roll French Toast Bake

A few weeks back, my brother was showing me this awesome breakfast/dessert that he had come across. He must think it's fun to tag me in some of the most 'un-skinny' recipe ideas that he comes across. Hey, if he didn't razz me I would think he didn't care!

Anyway, the thing he showed me was an amazing cinnamon roll french toast bake that truly had nothing good in it. To be a little bit of a smarty myself, I decided I was going to take that amazing looking bake and turn it into something that was still drool worthy but, also wouldn't have me bolting out the door to the gym after indulging.

Strawberry & Coconut Matcha Chocolate Bark

Valentine's Day is approaching quickly and I'm all for a little guilty pleasure every now and again. Especially when it involves a special holiday of sorts. Although, if I'm going to have any sort of treat, I always tend to throw in a few health aspects just to make it more guilt free. And this matcha chocolate is no exception!

I'm a pretty big fan of chocolate bark, in fact it's a pretty dangerous thing for me to make because tends to go pretty quickly around here. I've been toying with matcha powder for a few weeks now after buying my very first bag of it, and I have to say, it's good stuff.

I've even gotten my mom onto the matcha train too! So much so that she's asked me to come up with ways to add it into foods rather than just drinking it all the time...

This New Year has gotten off to a great start around here, full of new friends, new family, and lots of fun. As always for the past few years, a better diet is always towards the top of my list. Vegetable & Stars Soup

So, last week I was in the midst of what had to have been one of the worst colds of my life. I kid you not. This cold was fierce. It came with aches, the worst sinus pressure I've had, and was just all around bad news. Thankfully this week, I'm finally on the mend after the two week long fiasco. Unfortunately, it seems that my little princess has taken over where I left off.
