It never fails, the first thing to go when we're too busy or have a limited budget, is our eating habits. However, there are plenty of tips, tricks, and hacks out there that will save you time and money in the kitchen.

Take this Creamy Sundried Tomato Basil Vodka Sauce with Mushrooms for instance; it's a one-pot sauce dish that tastes so good, they'll think you spent a fortune and spent hours on it. When in fact, it's just a handful of ingredients (most of which are already in your pantry or fridge) and half an hour to get to this blissful sauce heaven...

Pumpkin Spice Snickerdoodle Cookies

November 4, 2017 Amanda Plott

As Thanksgiving nears and the weather here in Texas cools off more and more, I'm all the more in the mood for all things pumpkin; and couldn't be more excited to really get to use my oven again!

Now, as I get older I've started to crave the more salty and savory things when I used to be a sweet fanatic through and through. However, from time to time... all I want and all I crave are warm, fresh-baked, homemade cookies. 'Tis the season, y'all...

The holiday season is fast approaching, which always means plenty of friends and family coming and going to visit. When this time of year rolls around, there are always two things that I like to have on hand and ready to go; a warm cup of coffee and something sweet to enjoy it with.

There isn't much that reminds me of the holidays and family fun other than a traditional and perfectly tasty sugar cookie. That's probably because my mom and I get together once a year to bake up a cookie storm in my kitchen. We usually each pick two kinds of cookies and bake the day away together. Sugar cookies are always my first choice!...

Collard Green (Tortilla-Free) Enchiladas

October 30, 2017 Amanda Plott

These enchiladas aren't quite naked. But, they are pretty close.

Over the past couple of weeks, I've gotten a lot of local collard green leaves in my farm box that I just wasn't too sure what to do with. They're HUGE leaves too, and while most people in the south chope them up and cook them forever... I really wanted to make as much use out of their enormous size as I could manage.

When in doubt, make it into an enchilada...

Pie in a Pumpkin (Pilgrim's Pumpkin Pie)

October 26, 2017 Amanda Plott

Haven't you ever wondered how pumpkin pie got started? Did the pilgrims really make 'pumpkin pie' for the first Thanksgiving? I guess we'll never know. But, if they did, it probably would have been a lot different from today's standard pumpkin pie. And according to one source, it's thought that it would have been more of a 'pie in a pumpkin'.

This more 'traditional' pumpkin pie is basically made by baking a pie pumpkin and filling it with a delicious lightened up custard mixture that bakes into the whole pumpkin; giving you all the flavors of the pumpkin pie that we all know and love...

Skinny Zuppa Toscana

Okay, so there really isn't enough good things that I can say about this soup. I actually made my first attempt at this soup a few years ago. Long before I originally posted it here. My in-laws were in town and I knew that this soup from a well-known restaurant happened to be one of my father-in-laws' favorites. Since he's a health-conscious individual such as myself, I thought it would be fun to try my hand at making a healthier version of it for him.

I hadn't had the soup before, so I couldn't say at the time if it was anything similar to the one that he was used to, but he did have a couple of bowls of it for dinner! Me? I was anything but a fan. Why? One word. Kale.

Yes, I've ranted on before about my strange love/hate relationship with kale. And, this is basically where the hate part of that started...
