Skinny Unicorn Ice Cream Cake (Sponsored)

My little girl is 6 years old now and is a little eccentric. She's a lefty and as such is incredibly creative and imaginative. Needless to say, in this house, we 'believe' in magical things like fairies, unicorns, mermaids, leprechauns, and so on. That's what childhood is for, right? Magic, wonder, and all things amazing.

Childhood is a thing worth celebrating.

Of course, this Unicorn Ice Cream Cake would be amazing for any holiday or celebration and the bright and super fun colors are completely versatile and up to you to get creative with. Maybe there's a back-to-school unicorn around your house with the primary colors? Or a holiday unicorn with red, green, and white? Today though? It was all about the infamous rainbow unicorn.

This Unicorn Ice Cream Cake is really simple to pull together. For the base 'crust' of the cake I used my traditional methods of lightening up a vanilla cake mix, and then halved it to give just enough for the 'crust'. The ice cream cake though, is made with The Curious Creamery Ice Cream Cake Mix.

But, you know me. I love to tinker, and the outcome is almost always sparkly and full of color. This Unicorn Ice Cream Cake is no different!

I used a bit less sugar than called for originally, swapped out some of it for natural sweetener, and the ice cream cake was still perfectly sweet enough for my needs with the added bit of cake 'crust' layered on the bottom.

Here's a helpful tip: Not a fan of food coloring? There's all natural options out there available to color your cake with too!

The Skinny:

Ingredients:
Cake 'Crust':
1/2 Box (About 7.5 Oz.) Vanilla Cake Mix
1/2 C. Water
3 Oz. Plain Fat Free Greek Yogurt
1 Egg White

Ice Cream:
1 1/8 C. Very Cold Fat Free Milk
2 1/4 C. Very Cold Heavy Whipping Cream
1/4 C. Sugar
1/4 C. Natural Sweetener
1 (3 Oz.) Pouch of Curious Creamery Sweet Cream Ice Cream Cake Mix
Food Coloring of Choice
Plenty of Colorful Sprinkles and/or Jimmies

Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside bottom of an 8 or 9" spring form pan with non-stick baking spray; set aside.

Whisk together the 1/2 Box Vanilla Cake Mix, 1/2 C. Water, 3 Oz. Plain Fat Free Greek Yogurt, and 1 Egg White until no lumps remain.

Add in some sprinkles if you want and pour into the bottom of the prepared cake pan.

Place into the oven and bake for about 10-15 minutes or until the cake is cooked through and springs back to the touch.

Allow the cake to cool completely!

Can't find it? Don't fret! Talk to your store manager if The Curious Creamery is not available at your local Walmart.

While the cake is finishing cooling follow the basic directions for the Curious Creamery Ice Cream Cake by, placing the Fat Free Milk, Heavy Whipping Cream, 1/4 C. Sugar, and 1/4 C. Natural Sweetener into the bottom of a stand mixer.

Add the contents of one of the (3 Oz.) packages of Ice Cream Cake Mix into the bowl as well.

Using the whisk attachment, beat on the highest speed for 3 1/2-5 minutes.

Alternatively, you could use a hand mixer.

Divide the ice cream cake base evenly among the amount of bowls you wish to have for the different colors of layers.

Add the food coloring and stir to blend well.

I used 6 colors for this unicorn cake. Pink, orange, yellow, green, blue, and purple.

To get the brightest colors possible, I used gel food colors with about 20 drops of coloring per bowl.

Spread the different colors in over the cake 'crust' layer. Top with plenty of sprinkles and sparkly goodness.

I did half of the pink, orange, yellow, green, blue, purple, and the remaining half of pink.

Feels see to add more rainbow sprinkles in between the different colored layers!

Cover and place the cake pan into the freezer for 2-6 hours until completely frozen.

Once done, remove from the freezer and cut evenly into 13 slices.

Serve right away and enjoy!

Yum! Stick a fork in me, I'm done. I've gone to rainbow heaven.
