Originally when I posted this back in May of 2013 Mother's day happened to fall on my parents anniversary and unfortunately the day hadn't started off well for either me or my mother. I had the dilemma with my laptop, which I now have back, and my mom was having some car issues.
Needless to say, I went to pick her up and us three girls (my mother, daughter, and myself), decided to stop and have brunch in downtown Austin at a local hot spot...
I got some fresh local beets this past week, and while beets are definitely one of my favorite salad toppings, I hardly ever buy them at the store for myself. I'm not entirely sure why I don't either. I've used them to make some pretty awesome things in the past couple of years, like this Beet Pesto. Or with being added to another salad that I paired with my Skinny Cilantro Lime Vinaigrette.
These oven roasted beets have to be one of the most simple, easy to do, and flavorful things you can make. They take just an hour to roast and just two ingredients to make. Plus, the prep work is minimal. Giving you an hour to go about your business doing whatever else you need or want. Almost three years ago I made this wonderful Tortellini en Brodo that was amazing and my whole family loved it. Yes, even my picky little first grader. Sometimes the most simple meals are the ones that my family and I adore the most. ...Though for different reasons, of course. This Spinach & Artichoke Ravioli en Brodo was definitely inspired by that one from a few years ago, but it is even more simple with only 6 ingredients and yet just as much flavor (if not more!) This is a light soup that still somehow manages to be rather hearty. Those big beautiful green ravioli soak up that wonderful broth and all of the flavors that go along with it...
Brrrr! It's freezing here in Austin today. No, like... literally it is. I needed an excuse to turn the oven on since that always helps warm the house up and I sure enough found that excuse when trying to figure out what I was going to do with myself for breakfast. I remembered that I had gotten these wonderful farm fresh eggs and local produce yesterday and just knew they would fit the bill.
So, I kicked on my oven and got to work.

The big football game of the year is coming up and being a native Texan, I couldn't be more excited for it. I had been wanting to share this recipe ever since I started this blog a whole 5 months before it actually made it into fruition. (That was now nearly 4 years ago! Can you believe it?!) It's super easy, healthy, and yes... tastes every bit amazing as it looks.
