Breakfast is the one meal of the day that I tend skip most often. I think it's just... somehow easily lost in the shuffle of life and missed somewhere between getting up and ready or rushing around to get my little girl out the door and off to school.

I have found that if I have a breakfast in mind that is planned, easy, tastes amazing and is somewhat portable... I have no excuse to miss out on the most important meal of the day.

These have been my go-to breakfast for about two weeks now. After all, how do you say no to bacon and eggs? Easy. You don't!...

Healthified Irish Nachos

Irish nachos get their name from the fact that they are basically like any other traditional 'nacho' except that they are made by using potato rather than tortilla chips, and are often served in any pub along side a beer!

Of course, they are not generally the most healthy option that you can find. With St. Patrick's Day right around the corner, I thought I would give this classic a healthy twist in honor of my Irish heritage...

Skinny Spicy Chicken Sandwich

While fast food is something that I desperately try to stay away from, that doesn't mean there aren't things out there that I want to be in love with. I'd just prefer to find a healthier way to cook them for myself and my family. Case and point... the spicy chicken sandwich.

What I was going for here is sort of a kicked up version of the one that you'll find at almost any chicken joint such as the infamous Chick-fil-a. I wanted something with a little more spice and a lot less calories and fat! And... not fried...

Hot & Spicy Cheesy Kale Chips

A few weeks ago my mom and I took a trip to my new neighborhood Whole Foods Market. While we were there scoping things out, we came across some very special kale chips. Crispy, crunchy, nasty-hot, cheesy kale chips. The only problem was... $8? Yikes!

I immediately told my mom once again about my Crispy Kale Chips, and suggested that I try my hand at a spicy cheese version. After all, they would be a fraction of the cost of the little $8 container that we were munching on.

Irish Car Bombs are a super tasty alcoholic drink that always makes it's appearance around St. Patrick's Day.

Don't know what an Irish Car Bomb is? Well, it's a fun little drink where you drop a shot of whiskey and irish cream into a Guinness beer and then quickly chug it down. You really have to chug it down before the cream curdles in the beer. Bleck! And you don't want that.
