Leftover Turkey Stew

It’s hard to know exactly what to do with leftover Turkey after Thanksgiving. I’ve made soups, dumplings, and a few other things in the past. This time though, I thought I would try my hand at making a sort of stew. It was surprisingly cold here on Thanksgiving this year, which is pretty strange. The past few years, we’ve had a super sunny Thanksgiving with a high of something near 80 degrees.

Normally I would say it was a ‘yucky’ day, but I always enjoy cool weather on the holidays that keeps everyone indoors and cozied up together. You know, encourages us to spend family time together. Sausage, Apple & Baby Kale Whole Wheat Strata

Thanksgiving is in just a few days and when the Holidays are rolling in, I like to be sure that I have breakfast taken care of. Strata is a great way to use up what you have on hand. They’re pretty flexible and can be made ahead of time to have a breakfast (or brunch) ready to go for a whole crowd of people. Mhm, that’s right. This breakfast makes a whopping 12 servings!

If you’re looking for a slightly more out of the box dessert for Thanksgiving or Christmas, look no further! This Skinny Cranberry Cherry Cobbler is a mix of my favorite cobbler recipe and my 5 Ingredient Skinny Cranberry Cherry Pie.

Even for being made with cherries and fresh cranberries, this cobbler is surprisingly simple and easy to put together. During the colder end of Fall and on into Winter months, I like to stick to comfort food classics. And there isn’t much that’s more of a comfort food or a classic than a nice warm bowl of homemade tomato soup. I’ve made a lot of tomato soup in my past, and for this Roasted Red Bell Pepper & Tomato Soup I used one of my favorite recipes and changed it up just a bit.
