Crock Pot Pumpkin Spice Oatmeal (Instant Pot too!)

Originally when I made this oatmeal, I had pretty recently posted a Skinny Baked Pumpkin Pie Oatmeal, but these two oatmeals are pretty far apart in the realms of texture and preparation. Plus, I’ve added in new instructions so this oatmeal can be made in an instant pot (pressure cooker) in under thirty minutes!

The start of school means the end of summer, right? Right?! I have to say, that I have just about reached my limit on the heat over here in Texas right now. 'Nut & Seed' Grain-Free Pumpkin Spice Granola

It's been a hot minute since I made up a batch of homemade granola, mostly because it's just been way too hot here to even think about turning the oven on. But, sometimes... it's just worth it. And this morning? It was just that - totally worth it! With pumpkin spice season on the horizon, I thought there was no better time than now to tempt the cooler weather in with another pumpkin inspired treat!

I based this grain-free granola off of one that I made a while back. The main differences would be the spice used in it and the seeds that I chose to include. Since we're going with the Fall theme, I decided to use pumpkin seeds. Two kinds of pumpkin seeds, that is. I tell you, summer is not going to go down without a fight this year. It's been well over 100 degrees here in Austin, Texas and so far we're still hovering in the upper 90's and often with a heat index of 106+ - yikes! It's hot, but nothing is quite as hot as this Quarter Pounder Burger Salad. 

Let's face it, we all know what a 'quarter pounder' is. We don't even need to add the 'burger' part to that phrase and we'll all understand what's being spoken about. A quarter pound patty that's got lettuce, tomato, pickles, maybe some onion, and of course special sauce!

It's been a busy week and so far an even busier weekend! My daughter started school back up and we had just managed to climb off the plane from Hawaii in time to do so. So among the jet lag and getting back into the routine of things I was in dire need of quick and easy lunch options.

Tater Tot Breakfast Bake

Breakfast does not have to be a chore. This Tater Tot Breakfast Bake is quick to toss together and pretty much does it's own thing while baking in the oven. Giving you plenty of time to do other important things. You know... like settling into your back-to-school routine. One of the best parts about this breakfast casserole though, is that it can be made ahead and popped in the oven any time.

Being as it makes a rather decent sized pan of it, you could probably enjoy this all week long with a quick reheat in the morning to enjoy it again. This is a pretty hearty and filling breakfast too. There's layers of sausage, egg, cheese, potatoes and yes... even some bacon!…
