This week we’re finally going ‘back to school’. I made the tough decision to start my little one with learning online at least for the first week, and maybe even on to the first semester. There is no other reason than the fact that I work from home myself and have for years, so the idea of her doing school online here at the start, isn’t really such a ‘big deal’. Even so, it’s still BACK TO SCHOOL. Which means any and all things involved in that. Even breakfast!

Peaches are a big thing around here during the summer. Even though this summer is a little different, there’s still plenty of peaches to go around. So when I got my hands on some fresh local peaches, I wanted to be sure to do something worthy with them. That’s where this Skinny Peaches & Cream Baked Oatmeal comes in.

So… I don’t like sea food. That is why you will never see any sea food recipes around here. No, I’m not allergic to it, I just don’t like it. It’s not a taste thing or a texture thing. It is flat out just that I don’t like sea food. BUT. I do like sushi. I love vegetarian sushi.

Skinny Baked Garlic Parmesan Boneless Chicken Wings

I’ve got to say… I’ve been holding off on making chicken wings for a lot of reasons. Mostly because I don’t like to eat meat off the bone, and also it can be pretty tricky to make wings in a better-for-you way. That’s probably because most wings are deep fried and the closest thing I have to that is an air-fryer which isn’t quite the same.

I came across a little trick though that helps baked chicken get nice and crispy brown on the outside and yet still juicy on the inside. So, these aren’t ‘battered’ boneless wings but they are still crisp and loaded with intense garlic and parmesan flavor!…

These Greek Pork Kabobs are easy-peasy lemon squeezy! Whip up a delicious Greek inspired marinade with a handful of spices, olive oil, and lemon. Skewer and grill. These kabobs can be made well ahead of time and kept in the fridge up until you’re ready to grill and enjoy, making them great for a weeknight meal prep!

There really isn’t any way to keep these kabobs light because they’re naturally lean. I went with a pork tenderloin, but chicken would be a great choice of protein here as well…

I’m not unfamiliar with a crustless quiche. Quiche is one of my most favorite breakfast, brunch, lunch, and dinner meals! I guess that’s one reason why I love quiche; It’s a meal appropriate at any time of day. Another thing I like about it? It’s a great way to use up leftovers!
