Baked Amish Overnight Oatmeal

As I think back, I'm not sure when or how I got turned on to Amish Oatmeal. But, I do know that it was pretty much an instant hit with my family. It's quick and easy to prepare with just a handful of basic kitchen staples that soak together overnight to bake up beautifully the next morning.

So, what is Amish Oatmeal anyway? Well, it's sort of a cross between oatmeal and bread pudding. Eggs, vanilla and milk are whisked together to create the 'custard' that the oatmeal is baked in.

Many years ago I started making my own spaghetti sauce. Don't get me wrong, jarred spaghetti sauce has it's place and time in my life too. But, when given the option, I will always prefer making my own. I've made several types and kind. Skinny Mimosa Loaf Cake

Yesterday, The Skinny Fork officially turned 5 years old! Can you believe?! I decided to celebrate the best way that I know how, and that's with mimosas and cake! But, instead of keeping them separate, I put them together into one AMAZING loaf cake.

That's right babes... there's champagne and fresh squeezed orange juice IN this cake TOGETHER. I'm calling it a 'loaf cake' because it's not really a bread, but it's baked as a loaf. Ergo, loaf cake...

Roasted Beet Hummus

There isn't much that's prettier than this hummus right here. I mean... look at it. It's perfectly gorgeous. Roasted beets make for the beautiful fuschia pink hue in this hummus that is sure stand out any time of year but especially around Valentine's Day.

Hummus is super easy to make, and it will save you a ton of money to make yourself too! Plus, you have complete control over what goes into it. And let's face it... It's just fun to eat pretty stuff. You eat with your eyes first...

Mornings. Am I right? Even though I consider myself a morning person, they are still taxing on everyone. Even me. As I was sipping on my coffee this morning while waiting for my daughter to finish getting her shoes, she asked me if I was going to eat breakfast. She couldn't understand why I hadn't eaten already and how I wasn't hungry.

Such is the way of a mom. Of course, I was hungry! But there's just no time until after I get her off to school. Once the mad dash getting her off to class is over, that's when I get to finally eat. And even then, I'll escape breakfast some days. That's why I make myself meal prep breakfast. If it's already 'ready' then I have no excuses to skip out on the most important meal of the day.
