Zucchini Noodle Spaghetti

Many years ago I started making my own spaghetti sauce. Don't get me wrong, jarred spaghetti sauce has it's place and time in my life too. But, when given the option, I will always prefer making my own. I've made several types and kind. Some in the crockpot, others with meatballs, this one though is easy, simple and full of tomato flavor.

This Zucchini Noodle Spaghetti is a perfect weeknight dinner to make when you're looking for something quick and easy that is also guilt-free and a more wholesome option. The sauce here is loaded up with big hearty chunks of tomato, onion, garlic, and fresh basil (the secret weapon.)

Being as I've been on a low-carb kick in the new year, I thought what better way to show off this spaghetti sauce than with veggie spirals? So, I grabbed up some Green Giant Veggie Spirals from my local Walmart in the frozen vegetable aisle. I got the Zucchini Green Giant Veggie Spirals for my spaghetti because I know that the zucchini is a perfect pair with spaghetti sauce.

Green Giant® Veggie Spirals are A New Take On Noodles! Green They are made with one thing, and one thing alone; 100% veggies. So, naturally, they have up to 90% fewer calories than pasta. The New Green Giant® Veggie Spirals are the perfect swap-in for traditional pasta because they're gluten-free and come clean of sauce or seasoning so they are completely versatile.

As I said, I used diced tomatoes here. That's because I love to have those pieces in there. But, if you're more of a traditional sauce person, feel free to choose another cut of tomato or even a 'no salt added' tomato sauce.

No matter what, in the end, you'll have a dinner for two that's just shy of 100 calories in a serving and just 16 carbs. Not bad for a big hearty bowl of spaghetti!

Heat the oil in a large pot over medium-high heat and add in the 1/2 Medium White Onion to cook for a couple of minutes or until becoming tender, then add in the 1 Garlic Cloves.

Pour in the Can of 'No Salt Added' Diced Tomatoes into the pot, along with 1/2 Bunch of Fresh Basil, and 1/2 Tbsp. Red Wine Vinegar.

Bring it all to a boil then cover and reduce the heat to simmer for about 15 minutes.

While the sauce is cooking, cook your Green Giant Veggie Zucchini Spirals according to the package directions.

Once the Green Giant Veggie Zucchini Spirals are done and the sauce has simmered, toss them together in the same skillet to finish off. Season with salt and pepper to taste.
