Easy Cheesy Apple Soup
Yes, apples and cheese actually make an incredible duo. The tartness and natural sweetness of apples balance out the creamy, salty richness of the cheese in this delicious soup!
Ingredients
- 1 Large Yellow Onion, Diced
- 1 Tsp. Fresh Chopped Thyme
- 1 Tsp. Minced Garlic
- 8 Green Apples, Peeled & Diced (Mine were small.)
- 2 C. Reduced Sodium Chicken Broth
- 16 Oz. Apple Cider
- 2 Tbsp. Maple Syrup
- 1 C. Shredded Sharp Cheddar
- 8 Oz. Brie Cheese, Sliced
- Salt & Pepper to Taste
Instructions
- Place a large pot over medium-high heat.
- Lightly spray the inside with non-stick spray and add in the 1 Large Yellow Onion; cook for about 5 minutes or until tender.
- Add in the 1 Tsp. Fresh Chopped Thyme and 1 Tsp. Minced Garlic. Continue to cook for a couple of minutes or until the garlic becomes fragrant.
- Stir in the 8 Green Apples, 2 C. Reduced Sodium Chicken Broth, 16 Oz. Apple Cider, and 2 Tbsp. Maple Syrup.
- Bring it to a boil then reduce heat the simmer for about 20 minutes.
- At the end of the 20 minutes, add in the 1 C. Shredded Sharp Cheddar and 8 Oz. Brie Cheese, and continue to cook for 5 minutes or until all the cheese has melted.
- Season with salt and pepper to taste and serve right away to enjoy!
