Enchilada Egg Tostadas

Ingredients
- 2 Ole Xtreme Wellness! Keto Zero Carb Street Taco Flour Tortillas
- 1/4 C. Refried Black Beans
- 2 Tbsp. Reduced Fat Shredded Cheddar
- 1/4 C. Enchilada Sauce
- 2 Whole Large Eggs
- Cilantro
Instructions
- Bake or air fry 2 Ole Xtreme Wellness! Keto Zero Carb Street Taco Flour Tortillas until slightly browned and crisp on the edges. (I air fried mine at 400 for 7 minutes, tossing around every 2-3 minutes.)
- Set out the prepared tortillas and top each with 2 Tbsp. of the Refried Black Beans and 1 Tbsp. Reduced Fat Shredded Cheddar; side aside.
- Heat a medium skillet over medium-high heat. Lightly coat with non-stick cooking spray and spoon 2 Tbsp. Enchilada Sauce onto one side of the skillet and the other 2 Tbsp. Enchilada Sauce onto the other side.
- Allow the Enchilada Sauce to heat and start to bubble. Then reduce heat to medium and crack eggs in over each heated Enchilada Sauce. Cover and allow to cook until done to your liking. (I flip mine to get a slightly firmer yolk, but do what you like most here!)
- Top each prepared tortilla with an enchilada egg and garnish with cilantro to enjoy right away!
