Bananas Foster Blended & Baked Oats
This isn’t your average boring bowl of oats—it's a quirky, healthy twist on the classic Bananas Foster dessert that will have you craving breakfast all day long.
Ingredients
- 1 C. Dry Uncooked Quick Oats
- 1 Tsp. Baking Soda
- 1 Banana
- 1/2 C. Unsweetened Vanilla Almond Milk
- 2 Tbsp. Natural Sweetener
- 1 Tsp. Vanilla
- 1/8 Tsp. Salt
- 1/4 C. Sweet Liquor (I used Liquor 43)
- 1 Banana, Sliced
- 1 Tbsp. Brown Sugar
Instructions
- Preheat the oven to 375 degrees F. and lightly coat the inside of two ramekin dishes with non-stick baking spray.
- Place the 1 C. Dry Uncooked Quick Oats, 1 Tsp. Baking Soda, 1 Banana, 1/2 C. Unsweetened Vanilla Almond Milk, 2 Tbsp. Natural Sweetener, 1 Tsp. Vanilla, and 1/8 Tsp. Salt into a blender or cup of an immersion blender. Puree down until mostly smooth.
- Divide half of the oat mixture evenly among the ramekins; setting aside the rest for later.
- Heat a small skillet over medium-high heat. Once warm, give a light coat of non-stick cooking spray.
- Add the 1/4 C. Sweet Liquor, 1 Banana, and 1 Tbsp. Brown Sugar to the skillet and allow to cook for a minute or two before turning over and cooking for another minute or two.
- Once the bananas are slightly softened turn the heat off and divide the bananas evenly between the ramekins, adding in a little of the warmed liquor too.
- Top the warm bananas with the remaining oat mixture divided evenly.
- Place in the oven to bake for 25-30 minutes.
- Once done, remove from the oven to enjoy right away or cover and store in the fridge for breakfast meal prep!
