Guinness Oat Bread

This Guinness Oat Bread is a favorite around here, with a full 12 ounces of beer baked right in, this bread is a real crowd pleaser. Even though St. Patricks day has passed, I’m still over here using up Guinness. One of my favorite things to do with beer (since I don’t drink it myself) is to use it in cooking, and more specifically, in baked goods.

I don’t think I’ve ever used a whole bottle of beer in bread before though. The stout gives this bread a beautiful golden hue and just enough beer taste to let you know it’s there without overwhelming you. Yep, still over here trying to eat less meat. The more delicious vegetarian options that I can come up with at this point, the better. And this Chickpea & Spinach Curry is so quick, easy, and tasty that it may just have to go into the weekly rotation.

This curry is made all in one pan, making it perfect for easy clean up on a weeknight. It’s also fairly quick to make with only about 15 minutes of cook time and hardly any prep work needed. So, this is probably one of the best desserts in the world. With two of my favorites desserts combined together into one ultimate dessert. How can you go wrong? If you love s’mores and if you love brownies, then there is no way that you won’t love these S'more Brownies even more!

Tofu Pad Thai

Pad Thai tends to be one of my favorite go-to asian themed dishes. I think it’s probably that way for a lot of people since it’s common, simple, delicious, and also tends to be one of the better-for-you options on a menu. I always like to take mine a step further when I can to get it meatless too.

Today I decided to make a take-out fake-out version of Tofu Pad Thai! It’s super quick and easy to make. Everything is put into one skillet for a quick toss and cook at the end. Cheers to easy dinners! This Baked Caprese Chicken is a real winner. With just a handful of ingredients and about 5 minutes of actual hands on time (maybe even less) this chicken is super easy, tasty, and quick to make! The recipe is easily doubled or tripled for a larger family, but I’ve left it scaled back for two servings.

So what’s caprese anyway? It’s generally a salad that includes tomatoes, cheese and either pesto or some sort of balsamic reduction. Since its Italian based, this chicken would be good paired with a simple side salad like I did, or with veggies and some pasta or zucchini noodles even.
