Baked Caprese Chicken

Cheers to easy dinners! This Baked Caprese Chicken is a real winner. With just a handful of ingredients and about 5 minutes of actual hands on time (maybe even less) this chicken is super easy, tasty, and quick to make! The recipe is easily doubled or tripled for a larger family, but I’ve left it scaled back for two servings.

So what’s caprese anyway? It’s generally a salad that includes tomatoes, cheese and either pesto or some sort of balsamic reduction. Since its Italian based, this chicken would be good paired with a simple side salad like I did, or with veggies and some pasta or zucchini noodles even. No matter how you serve it up, this tasty chicken is a great part of dinner.

Feel free to use whatever ‘Italian style’ seasoning you like. I used my Hot Sh!t seasoning which is pretty much good on just about anything. I used a pre-made pesto for this chicken, but only because I don’t currently have any basil in my backyard just yet to make my own Spinach & Basil Pesto.

Either way, it’s fresh, it’s light, and it’s perfect for dinner as we start rolling into the warmer weather of Spring finally!

Easy baked chicken that's topped with pesto, tomatoes, and fresh mozzarella for a quick weeknight part of dinner that everyone will love.

Ingredients

  • 2 Chicken Breasts
  • 1/2 Tsp. Italian Seasoning
  • Salt & Pepper to Taste
  • 2 Tbsp. Pesto
  • 1 Sliced Roma Tomato
  • 4 Oz. Sliced Fresh Mozzarella

Instructions

  1. Preheat the oven to 375 degrees F. and lightly coat the inside of an oven safe dish with non-stick cooking spray and set aside.
  2. Place the chicken into a ziplock and pound it out to be no more than an inch thick.
  3. Season each with salt, pepper, and Italian seasoning of choice and place in the prepared baking dish.
  4. Top each piece of chicken with about 1 Tbsp. pesto, half of the roma tomato, and half of the 4 Oz. mozzarella.
  5. Place in the oven to bake for 45 minutes or until the internal temperature has reached 165 degrees F.
  6. Once done, remove from the oven and enjoy right away!
