Simple Snack & Travel Boxes

The third and last box is the veggie snack box, which is full of fresh veggies including carrots, tomatoes, sugar snap peas, and zucchini. That’s all paired with a hummus. I used a local sunflower seed hummus, because it’s one of my new obsessions.Well, a lot of traveling happened this weekend and being as I’m trying to eat a more consciously while traveling, I thought I would try my hand at some travel-friendly snack boxes! I wanted to make sure that these snack boxes were simple and easy to put together while being gluten-free, soy-free, and vegetarian too!

BLT Breakfast Bowl

Who doesn’t like a good BLT? Bacon makes just about everything better. Even breakfast! This Breakfast BLT Bowl is one of the quickest, easiest, and most delicious breakfasts that I’ve had in a while. Again, I’ve still got leftover eggs in my fridge (I’m down to just two now!) and I’m finding any excuse and way possible to use them up.

Being as I’m keeping things simple lately in the kitchen, and knowing how basic and easy a BLT is, I thought why not make a BLT into something for breakfast? And why stop there? Let’s turn it into a breakfast bowl at that!

Simple Wasa Cracker Snack

Banana Nut Granola

Banana nut bread has to be one of my most favorite things in the world to eat for breakfast. I honestly don’t make it enough, and haven’t made it in a good long while. Lightened Up Frey Pie (Game of Thrones)

As most of the world knows, the premier of the Game of Thrones TV series was yesterday. We’ve only got 5 more (lengthy) episodes left. In this house, we were celebrating with official Game of Thrones beer and also this DELICIOUS Frey Pie. Don’t worry, there’s no people baked into this pie, but it is a fun nod to the popular series and what happens when you cross Arya Stark.

This pie reminds me a lot of a traditional pot pie. One of the main differences here though is the meat that is used is ground instead of the usual shredded or cubed. It’s also loaded up with plenty of veggies. Namely mushrooms, carrots, and of course potatoes. It’s a hearty pie if ever there was one. We’ve got to survive the longer winter after all, right?…
