Simple Wasa Cracker Snack

My fridge, just like most fridges right now, is stocked full of hard boiled bright colored eggs. And no matter how prepared any of us are for it… we always always have leftovers that we just don’t know what to do with. Thankfully, I was hungry this morning and was forced to rummage through the kitchen to put together some sense of a breakfast/brunch/lunch bite for myself.

It’s the day before I go to the grocery store so my pantry and fridge are running on fumes right now. Pickings were slim, but! Somehow I managed. What do you need for this snack? Crackers. Avocado. Tomatoes. Hardboiled egg. That is all.

Okay, okay. Maybe some salt, pepper and Sriracha.

Yep! It’s that easy and there’s really not a reason for a ‘recipe’ here, but you’re getting one anyway! For being such an easy and simple snack or light meal, it’s actually pretty filling and two of them kept me going well past lunch and on into the early afternoon.

Feel free to make this simple snack your own. Not a fan of sriracha? Try any hot sauce that you like. Feeling extra spicy? Try some guacamole instead of plain avocado. Making it breakfast? Top with scrambled eggs instead!

Wasa crackers topped with some favorites! Avocado, tomato, and egg. Perfect for a snack or double it up for a light meal.

Prep Time: 1 Minutes • Cook Time: 0 Minutes

The Skinny:
Servings: 2 • Serving Size: 1 Cracker • Calories: 162 • Fat: 10 g • Saturated Fat: 2 g • Carb: 14 g • Fiber: 5 g • Protein: 5 g • Sugar: 2 g • Sodium: 85 mg

Ingredients:
• 2 Multi-Grain Wasa Crackers
• 1/2 Avocado, Mashed
• 1/2 Medium Heirloom Tomato, Sliced
• 1 Large Hard Boiled Egg, Peeled & Sliced
• Salt & Pepper to Taste
• Drizzle of Sriracha

Directions:
Lay out the wasa crackers.

Top each with half of the mashed avocado.

Divide the sliced tomato evenly over the two, followed by the sliced hard boiled egg.

Season with salt and pepper to taste.

Give it all a drizzle of Sriracha and enjoy right away!
