It’s a short, sweet, and simple one today!

This Black & Blueberry Smoothie is quick and so SO easy to make with just a handful of simple ingredients and a quick whirl around in the blender. This has been one of my go-to breakfasts for about two weeks now. And let me just say, that I’ve never been one to be that big into smoothies before. I’ve always preferred to eat my meals as opposed to drinking them.

But when it comes to this smoothie? I am totally fine with drinking it. In fact, it’s probably one of my all time favorite things for breakfast right now. It fills me up and gives me plenty of energy to get through the day…

So, I’ve had and made my fair share of egg bites in the instant pot, right? That got me to thinking… If I can make egg bites in the instant pot, why can’t I make a quiche in it? Well, as it turns out, you surely can! This quiche is packed with protein and is low in carbs. Plus, it’s keto-friendly and delicious!

This quiche cooks a bit more quickly in the instant pot than it would in the oven. It also comes out with a more ‘fluffy’ texture. Something more akin to an egg bite than a dense quiche…

Who else sneaks bites of raw cookie dough all the while knowing that you shouldn’t do it? I know that I sure do despite my greatest efforts not to. I’ve made raw edible cookie dough in the past, and it was pretty damn delicious. But, I thought I would take it a step further and make a gluten-free version of it!

It’s FriYAY and what does that mean in our house? Pizza day! How does that old jingle go?

Pizza in the morning, pizza in the evening, pizza at supper time!

That’s basically the law of the land around here. Even though my little one has pizza for lunch on Friday at school, she comes home and still wants to have pizza for dinner. Who am I to say no? It’s been a long week full of the first few days of school and we’re all pretty much exhausted at this point.

Italian Breakfast Bake

Breakfast is the most important meal of the day, they say. And I’d tend to agree. There is a reason they call it ‘breakfast’ too. The intention is to ‘break the fast’ of not eating overnight while you sleep. With being in the middle of an end of summer heat wave in Texas, I am avoiding my oven like the plague. The only time I’ll even consider using it is first thing in the morning before the heat of the day.

It’s been a while since I had a hot breakfast, so I figured it was about time to tempt the fate of the oven and heat and whip up a nice warm breakfast to enjoy.
