Baked Caprese Chicken

Cheers to easy dinners! This Baked Caprese Chicken is a real winner. With just a handful of ingredients and about 5 minutes of actual hands on time (maybe even less) this chicken is super easy, tasty, and quick to make! The recipe is easily doubled or tripled for a larger family, but I’ve left it scaled back for two servings.

So what’s caprese anyway? It’s generally a salad that includes tomatoes, cheese and either pesto or some sort of balsamic reduction. Since its Italian based, this chicken would be good paired with a simple side salad like I did, or with veggies and some pasta or zucchini noodles even. Split Pea Soup (Instant Pot)

The stores here in Texas are slowly getting back to normal after our bit of insanity a week ago during the winter storm. That being said, it’s still slim pickings when it comes to a lot of things on the store shelves. Recovery is going to take more time, especially with an entire state in panic. And that’s on top of the anxiety we’ve all had when it comes to food, lockdown, and this virus.

That being said, one thing that I was prettifying confident I could get my hands on was dried split peas. For some crazy reason or another it’s one of the only things you’ll almost always find on the shelves. Even when everything else is long gone. Baked PB&J Oatmeal

Who knew you could enjoy a PB&J for breakfast? Oh, wait. I did! This Baked PB&J Oatmeal is loosely based on a few of my other baked breakfast oatmeals but in PB&J form. Yep! There’s peanuts, peanut butter, and even jelly baked right into this oatmeal. Plus, I made it dairy-free, gluten-free, and vegetarian.

This Baked PB&J Oatmeal can be made in advance and reheats really well, meaning that it’s perfect for meal prepping and having on hand through the whole week. And, if you aren’t a fan or are allergic to nuts, you can always swap out the peanut butter for any nut free alternative. Back in June (wait really? I’ve really lost all sense of time and space…) I made these awesome Skinny Baked Garlic Parmesan Boneless Chicken Wings. And the seasoning mix that I put with it was just so damn amazing that I've kept it in my spice rack ever since. Yes, it’s really that good.
