Skinny Carrot Cake Roll with Cream Cheese Filling

Just in time for Easter! This morning I woke up with a Spring in my step (pun intended) and just had to make this Skinny Carrot Cake Roll with Cream Cheese Filling. I based the recipe loosely on the Pumpkin Cream Cheese Roll that I make in the fall. But, there's not ever a bad time for a cream cheese roll, in my opinion.

I kept this recipe pretty simple, using a boxed cake mix with a few add-ins to beef it up a bit. I kept it light with my usual swaps ins for a cake mix and even used a handy new powdered sugar replacement in the cream cheese filling.

Skinny Japanese Cheesecake

As I've come to find out, Japanese Cheesecake goes by a few different names, all of which do their fair share of describing this cake; Japanese Cotton Cake, Soufflé Cake, Jiggly Cake, and Pillow Cake, just to name a few...

Vegan Bananadoodle Cookies

Once upon a time I went to a place and tried a bananadoodle cookie, much against my will, and I liked it. No. Nope. No, no scratch that. I LOVED it. It was truly one of the best cookies that I had ever eaten. And that's saying a lot because I am a cookie fiend. I was completely surprised with how much I enjoyed the cookie. Mostly because out of all the cookies in the world, snickerdoodles are probably one of my least favorites.

I think I must find them bland or boring when compared to just about any cookie that's usually loaded up with extra naughty bits like chocolate chips.

Skinny Irish Apple Cake

Yaaay, St. Patrick's Day is coming. Maybe it's some of my Irish heritage or something to do with it being my Dad's birthday, but I really do enjoy St. Patrick's Day more than most. I can honestly say that it has absolutely nothing to do with green beer. Now, if they had green wine... that might be another story.

So every year I like to dive into Irish recipes leading up to St. Patrick's Day. I've made Corned Beef, Shepherd's Pie, Irish Soda Bread, Irish Cream Donuts, and so much more. This year though, I wanted to get in there and make another Irish sweet treat. So, Irish Apple Cake it is! It's a tender cake, similar to a coffee cake, that's loaded LOADED up with apples...

Skinny Mimosa Loaf Cake

Yesterday, The Skinny Fork officially turned 5 years old! Can you believe?! I decided to celebrate the best way that I know how, and that's with mimosas and cake! But, instead of keeping them separate, I put them together into one AMAZING loaf cake.

That's right babes... there's champagne and fresh squeezed orange juice IN this cake TOGETHER. I'm calling it a 'loaf cake' because it's not really a bread, but it's baked as a loaf. Ergo, loaf cake...

Skinny Red Velvet Cake with Cream Cheese Frosting

When I think of Valentine's Day, I think of red velvet cake. I think that's because it's so perfectly bright and red and just looks like it's full of love. And this one right here? It's made with love too.

As far as cooking goes, baking has always been one of my favorite things to do. Even though it can be one of the most difficult, especially when it comes to adjusting and altering recipes to be better-for-you.
