Cheers to easy dinners! This Baked Caprese Chicken is a real winner. With just a handful of ingredients and about 5 minutes of actual hands on time (maybe even less) this chicken is super easy, tasty, and quick to make! The recipe is easily doubled or tripled for a larger family, but I’ve left it scaled back for two servings.

So what’s caprese anyway? It’s generally a salad that includes tomatoes, cheese and either pesto or some sort of balsamic reduction. Since its Italian based, this chicken would be good paired with a simple side salad like I did, or with veggies and some pasta or zucchini noodles even. Monte Cristo Breakfast Casserole

I don’t know. I just like to shake things up sometimes by putting two or three things together that I enjoy and hoping that it turns out right. Today? It’s a monte cristo sandwich and a breakfast bake or casserole. Yep. And guess what? It’s pretty damn tasty if I do say so myself. I’ll tell you another thing, after this past week, I deserved a little somethin’ something’ special.

Carrot Cake Bread

I’m not going to lie, I’m excited and yet a little apprehensive about Spring this year. Last year about this time is when the whole world went to shit. Look, I don’t know. I’ve just been on a cookie binge lately I guess. But, I wanted something a little more ever green today than my Irish Cream Chocolate Chip Cookies from last week. Split Pea Soup (Instant Pot)

The stores here in Texas are slowly getting back to normal after our bit of insanity a week ago during the winter storm. That being said, it’s still slim pickings when it comes to a lot of things on the store shelves. Recovery is going to take more time, especially with an entire state in panic. And that’s on top of the anxiety we’ve all had when it comes to food, lockdown, and this virus.

That being said, one thing that I was prettifying confident I could get my hands on was dried split peas. For some crazy reason or another it’s one of the only things you’ll almost always find on the shelves. Even when everything else is long gone. Irish Cream Chocolate Chip Cookies

As we get closer to March and to St. Patricks’s Day, I thought I would try my hand at making some chocolate chip cookies, but with a little bit of an Irish twist. These cookies here are made with some Irish Cream baked right in. And let me just tell you, they’re so sooo good!

The out edges are browned and have a little crisp to them while the insides are light, moist, and totally fluffy. And there’s just enough Irish Cream in there to get a hint of the flavor without it being over powering. If you love chocolate chip cookies and you love Irish Cream - these Irish Cream Chocolate Chip Cookies will likely be your new favorites…
