Rainbow Super Salad with Hummus

How is it that eating the rainbow always seems to taste sooo amazing? There's something about all those natural bright colors that just set something off inside, making it extremely difficult not to smile when you see all of them together. And when in edible form too? Even better!

After all, who wouldn't want to eat a rainbow?

No big deal. I totally ate a rainbow for lunch.

Sounds pretty epic, right?

Plus, this salad is every bit as tasty as it is nutritious. I'm pretty sure that this is going to be a staple salad in my household throughout the summer months...

Skinny Tomato Pie

A couple of weeks ago my grandma and I were out running errands when we decided to stop at this well known place here in Austin called Kerbey Lane. They are famous for their unique twists on classic foods. As an added perk, they generally pride themselves on using organic and locally grown items in their kitchen.

As luck would have it, we happened to go in the middle of tomato season! While paroosing the ‘Tomato Menu’ I came across an interesting looking item that was marked as ‘Limited Quantity due to Popularity’… so of course that’s what I had to order. Tomato Pie!...

A few words that you don't normally see in a description together? Skinny, cheesy, and gravy. But, somehow I've managed to pull it off. This gravy is so full of vegetables and lean sausage that you can absolutely afford the cheese that's in there.

Seriously. This stuff is pretty addicting.

The first time that I made this recipe was last week to go along with my 3 Ingredient Biscuits as a test. I've never made a gravy before, much less one that was healthified or skinny at all. So, I was a bit skeptical that I what I had planned would turn out at all...

Cheeseburger Stuffed Zucchini Boats

I can has cheezburger? Without feeling guilty?! Yes, indeed! We all can.

These stuffed zucchini boats are a perfectly clever way to have a bun-less burger that I find to be a lot more filling and easy to eat than wrapping a patty in a mere lettuce leaf. You get all the satisfaction and flavors of a traditional cheeseburger packaged neatly into a zucchini squash.

Trust me when I say - you won't miss the bun at all!...

Strawberry Caprese Salad

Sometimes, you just have to step outside the box for a moment to find something truly amazing.

I have always loved caprese salads, and I have also always loved the combination of strawberries and balsamic vinegar... So, why not put the two together? While the pairing might seem a little odd to some, I promise this is sure to surprise and de{light}!

There's just something about the mixture of sweet juicy strawberries and the twang of balsamic vinegar that goes so perfectly together. I guess you could say, it's sort of a play on the whole 'sweet and sour' thing...
