Blueberry Lemon Monkey Bread

It’s Spring and you know what that means - blueberry lemon things for days! This Blueberry Lemon Monkey Bread is pretty much the perfect Spring breakfast, brunch, or even dessert to make. Monkey bread of any kind has been one of my go-to breakfast options for years now. I think it all started when my little was actually little and monkey bread was one of those things that was easy for little fingers to grab and eat.

This monkey bread here is loaded up with big beautiful fresh blueberries and lemony goodness. It’s bright with the citrus of the lemon zest and has that hint of sweetness from the blueberries. Now, you could top this monkey bread off with some icing drizzle, but I thought it was pretty unneeded. A quick sift of some powdered sugar and some extra lemon zest and it was perfection!…

Greek Chickpea Salad

With warmer weather starting to roll in, I’m craving fresh bright flavors more and more. And this Greek Chickpea Salad is as fresh and bright as one can get. It’s a garbanzo bean based vegetarian ‘salad’ that’s mixed together with bell peppers, onion, feta cheese, and a homemade easy to make vinaigrette dressing.

This dish ends up being naturally meatless, vegetarian, and gluten free too. Plus, there’s under 300 calories in a full serving so you really can’t go wrong with it whether it’s for lunch, snack, or as a side for dinner!…

Guinness Oat Bread

This Guinness Oat Bread is a favorite around here, with a full 12 ounces of beer baked right in, this bread is a real crowd pleaser. Even though St. Patricks day has passed, I’m still over here using up Guinness. One of my favorite things to do with beer (since I don’t drink it myself) is to use it in cooking, and more specifically, in baked goods.

I don’t think I’ve ever used a whole bottle of beer in bread before though. The stout gives this bread a beautiful golden hue and just enough beer taste to let you know it’s there without overwhelming you. The best part about this bread though, is that it’s sweet enough to be a part of breakfast, and savor enough to be a part of lunch or dinner!…

Yep, still over here trying to eat less meat. The more delicious vegetarian options that I can come up with at this point, the better. And this Chickpea & Spinach Curry is so quick, easy, and tasty that it may just have to go into the weekly rotation.

This curry is made all in one pan, making it perfect for easy clean up on a weeknight. It’s also fairly quick to make with only about 15 minutes of cook time and hardly any prep work needed. Another good thing about it is that it reheats really well. So if you’re looking for a meal prep lunch idea, this would be a great choice!…

I’m not going to lie, I’m excited and yet a little apprehensive about Spring this year. Last year about this time is when the whole world went to shit. Look, I don’t know. I’ve just been on a cookie binge lately I guess. But, I wanted something a little more ever green today than my Irish Cream Chocolate Chip Cookies from last week. Plus, I’m all out of those cookies anyway so it was time to make some fresh. One of my all time favorite cookies? Monster cookies!
