'Tortilla Trend' Omelette

There’s this trend going around right now called the ‘Tortilla Trend’ where you take a tortilla and cut it halfway through the middle and then proceed to fill each quarter segment of it with different things and then fold it over on itself to make a tasty wrap. I decided to take that idea and make into more of an omelette with some of my favorite breakfast burrito fillings.

Like I’ve said, it’s the end of the school year and quick and easy meals are what I’m about. This Beef Stew Casserole is going to be a new family favorite that I think has to go into general rotation. It’s filling and savory and is so easily put together. So what is Beef Stew Casserole anyway? Well, it’s exactly what it sounds like, beef stew in the form of a delicious casserole and doesn’t take hours on hours to make.

Easy Key Lime Pie

Key lime pie is one of my favorites. Not that I’d turn any fruit pie away, but there’s just something about key limes! I love that it’s a creamy textured pie that is cut through with the slightly bitter and bright notes that come along with a key lime. I haven’t made a key lime pie in a good long while, so I thought I’d whip up a super easy from scratch one to be able to enjoy on this very warm Texas weekend.

This Easy Key Lime Pie is made with just a few ingredients - six to be exact! And 5 of those ingredients are pretty standard to most home pantries. The only thing slightly exotic is the key limes themselves! Cookie Monster Cookies

Everything in moderation, right? These cookies are definitely a lot more decadent than I’m used sharing and enjoying, but I love a good big cookie. And I love anything cookie monster-esque. So, when I saw the original idea for these stuffed cookies, I just knew that I was going to have to do something similar and in a little bit more of a lightened up way, at least as much as I could manage anyway.

Lightened Up Lazy Enchiladas

It’s definitely that time of year where Summer is lingering on the horizon and we’ve all got to dig deep to try and push forward through the rest of the school year and into Summer break.
