'Nut & Seed' Grain-Free Pumpkin Spice Granola

August 31, 2018 Amanda Plott
pumpkin-spice-granola10.jpg

It's been a hot minute since I made up a batch of homemade granola, mostly because it's just been way too hot here to even think about turning the oven on. But, sometimes... it's just worth it. And this morning? It was just that - totally worth it! With pumpkin spice season on the horizon, I thought there was no better time than now to tempt the cooler weather in with another pumpkin inspired treat!

I based this grain-free granola off of one that I made a while back. The main differences would be the spice used in it and the seeds that I chose to include. Since we're going with the Fall theme, I decided to use pumpkin seeds. Two kinds of pumpkin seeds, that is. I picked up a raw one to roast with the granola, and a lightly salted roasted seed called 'snow white' pumpkin seeds to add in at the end…

Healthified Crock Pot Chicken & Dumplings

August 21, 2018 Amanda Plott
chicken-dumplings12.jpg

This is my healthier take on an old classic comfort food. I think the very first time that I had chicken and dumplings was at my grandmother's house with my dad when I was pretty young... elementary school still, I'm sure.

She cooked the soup up on the stove for a few hours and then tossed the raw dough into the pot. I thought she was crazy at the time, but after my first bite... I was in love.

Years later when I first started cooking, I dabbled with the infamous chicken and dumplings in the crock pot using canned condensed soups and biscuit dough. I'll be the first to admit that it was delicious, but a huuuge guilty pleasure! Full of preservatives and nothing good for you. Bleh!...

Chicken Faux Pho (Instant Pot)

July 31, 2018 Amanda Plott
faux-pho8.jpg

For a good long while now I've heard nothing but good things about pho. And to be honest, I've never given it a try. My brother swears by it and about the time that my hair stylist said the same thing, I knew it was going to have to happen. So, when I was planning out my meals for the week, I decided that I was going to dive head first in and make a quick and easy version of pho.

...And let me just tell you... it's pho-king delicious.

This pho isn't what I would call traditional. It hasn't spent all day cooking down in it's broth, and the ingredients are pretty minimal. The most of what's going on here is spices and fresh veggies - which I am anything but mad at…

Magical Color Changing Unicorn Noodles

June 26, 2018 Amanda Plott
magical-unicorn-noodles6.jpg

I feel as though I should explain here that my daughter and I are pretty much obsessed with mermaids, unicorns, rainbows and glitter. So when 'science' week started, I just knew that we were going to have to make ourselves some magical color changing noodles!

Unlike most 'colored' noodles out there, we're coloring these naturally by way of a purple cabbage. This gives those rice noodles a beautiful all natural light purple color.

I should also explain here that this is a simple recipe. It's not 'gourmet' by any means. I mean... let's face it, they're basically garlic buttered noodles, but the magic of the color changing and the fun with these noodles are what make them stand out!…

Garden Vegetable Soup

June 15, 2018 Amanda Plott
garden-vegetable-soup9.jpg

Last week it was 'ocean' week here in my house, and this week we're going with the theme of plants! In doing so, I decided to throw a LOT more veggies and vegetarian dishes into the mix this week. We always have a couple of vegetarian dishes every week, for health reasons, cutting the cost of food, and also because it just makes me feel better all around.

I could easily be a vegetarian. In fact, my daughter was basically a vegetarian of her own accord up until she was about 5 years old. Meat just wasn't something she was a fan of. And I can't say that I was far off from that myself with I was a little girl too.

Ready for a true side story about myself? My parents used to have to tell me that meat came from a meat tree when I was little to get me to eat it!…

Talk about a twist on classics, y'all! Today I've combined two of my most favorite things together; spicy thai peanut dressing and burgers! I know it sounds crazy, but just hear me out. These burgers are wholesome, full of flavor, and so juicy. They are perfect for summer cookouts, being light enough not to weigh you down with any richness.

This is definitely a more refreshing burger with the cool crisp slaw, and yet is still filling enough to satisfy even the most empty of tummies. The secret? It's in the sauce! The peanut sauce that is. The Spicy Thai Peanut Sauce on this burger is what seals the deal for me. I like a good messy burger, especially when I'm entertaining!...
