Crock Pot Pork Chile Verde

I had some leftover tamales that I stored in my freezer a week or so ago, and I was wanting something warm to pair them with that wasn't chili. I'm a little burned out on beans lately. Gasp! No, no. Just meat and vegetables here. Somewhere in the midst of racking my brain, I remembered this Mexican style stew that they serve up at one of the favorite local Mexican places here in Austin. Fall Harvest Turkey Thai Soup (Crock Pot)

This soup is perfectly amazing. It's the sort of soup that my dreams are made up of. Low calorie. Low carb. High protein and amazingly delicious. I somehow managed to catch an end-of-summer cold which I'm trying desperately to knock out as quickly as I can, and I always think the best way to do that is with some homemade soup!

Yes, I'm aware that it's still reaching the 90's occasionally here in Austin, but I need soup just like the rest of the country. Get yourself together Old Man Winter.

I had made some turkey breast tenderloins the other day and had some leftovers, so when I decided to jump on the soup band-wagon I knew exactly what I was going to do. Something fall inspired. Something 'harvest' oriented. Something... thai?

Crock Pot Spaghetti Squash Primavera

I've had this spaghetti squash staring at me from the kitchen counter for a week or two now, and I figured... I ought to put that beauty to some use before it went bad on me.

Now, you may or may not notice that this spaghetti squash is a little smaller than the ones you will find in the grocery stores. That is because... this bad boy was fresh off the farm, and from a local and organic farmer too - which makes it all the more exciting to me!

Fresh local ingredients are always the best and are generally higher in nutrients.

I wasn't quite sure at first just how I was going to do my farm fresh spaghetti squash justice. I suppose I felt as though it needed some careful love and devotion.

During my thought process, I remembered this idea I had seen somewhere about a spaghetti squash primavera that was done in a terribly naughty and yet totally delectable manner. I basically took that idea and ran with it; making it easier, lighter more economical, and still amazingly full of flavor...

Crock Pot Pumpkin & Maple Pork Tenderloin

Oh. My. Goodness.

My house smelled like maple heaven for an entire day with this cooking up in the kitchen. And yes, it tastes just as great at it smells! It was all I could do to keep from going in there towards dinner time and picking off the 'crispy' end pieces to snack on.

Yes, I'm that one. My mom and I are well known for tag-teaming the burnt ends at any family barbecue.

This pumpkin maple tenderloin was pretty amazing and perfectly fitting with pumpkin season and fall weather as it rolls in. I was a little skeptical at first since I'm not generally a fan of adding sweetness to my pork, but it was just the right amount of sweet and tang with the apple cider vinegar...

Skinny Buffalo Meatballs (Crock Pot)

Uhm, yum. I don't really need to explain to you just how amazing these buffalo meatballs are. The pictures speak for themselves, yeah? What I will tell you is that these are a healthier, easier, and absolutely amazing way to get your 'buffalo' wing fix without all that guilt.

These would be perfect as an appetizer on game day or just as great served in a meatball sub or as fun little sliders! And no one has to know that they are full of sneaky vegetables and lean turkey meat. Trust me, they won't even realize they're there...

Skinny Southwest Chicken Dip (Crock Pot)

I was craving something that was a little 'snacky' for a dinner this week. Sometimes, you just don't feel like having a meal for a meal. If that makes any sense at all to anyone else. So I settled on a chicken dip.

A while back I made a really tasty Skinny Buffalo Chicken Dip before, but since this was going to be partially for dinner, I wanted something that was a little different and maybe had some more substance to it. I did, however, use the same basic idea from the buffalo dip to create this southwest version of it.

This southwest chicken dip was nothing short of amazing, and it totally didn't feel or taste as if there was anything skinny or light about it. It's always nice to feel as if you're indulging, even if you aren't!...
