Pumpkin Pie Smoothie

I’ve pretty much been in smoothie mode recently which is pretty strange since I wasn’t a big fan of them in years past. I always tended to rather eat my food as opposed to drink it. But, with it being 90+ degrees here still in Austin… I figured the best way to get my pumpkin in the start of this Fall would be in the form of a smoothie.

Carrot Ginger Dressing

I’ve been playing around a lot lately with adding more and more vegetables to my meals and trying to do so in a sneaky and more clever way than just cooking them and plopping them on my plate. This Carrot Ginger Dressing is a fun asian twist on a vinaigrette.

I’m not quite sure how, but somehow the dressing ends up with an almost creamy texture. It’s light and bright and has just enough of a kick of ginger in there to keep you coming back for more. With it being so quick and easy to make that I’ll be using it this entire week for my lunches…

This Black & Blueberry Smoothie is quick and so SO easy to make with just a handful of simple ingredients and a quick whirl around in the blender. This has been one of my go-to breakfasts for about two weeks now. And let me just say, that I’ve never been one to be that big into smoothies before. I’ve always preferred to eat my meals as opposed to drinking them.

I’ve found lately that meal prepping my lunches has been my saving grace. If it wasn’t for preparing my lunches for a few days in advance, well… I’d be making some rather poor choices when it came time to eat. Who else sneaks bites of raw cookie dough all the while knowing that you shouldn’t do it? I know that I sure do despite my greatest efforts not to. I’ve made raw edible cookie dough in the past, and it was pretty damn delicious. But, I thought I would take it a step further and make a gluten-free version of it!
