This post was sponsored by Eat Smart as part of an Influencer Activation for Influence Central and all opinions expressed in my post are my own. I received product samples to facilitate my review.

I'm always looking for ways to get more fresh vegetables into my life and this Southwest Egg Bake is no exception. This small sort of 'crustless quiche for one' is a perfect little breakfast that's packed with flavor and also happens to be a powerhouse of super foods and nutrition.

Skinny Baked Pumpkin Mac-n-Cheese

September 13, 2016 Amanda Plott

We're finally settling in and getting used to being back-to-school over here. A routine is in place and things are starting to run more smoothly. It's such a busy and emotional time for parents and the kids, especially if you're starting up in a new school as my little one is. I've been determined to get my daughter off on the right foot by offering her more wholesome and meals and snacks during this transition.

I know first hand that it can be a challenge for many parents to find ways to making healthy eating both delicious and appetizing. My daughter is one of those picky eaters, which makes things all the more difficult when meal planning. One thing that almost any kid enjoys though, is macaroni and cheese!

With fall coming up on us, I decided to make a season inspired pumpkin macaroni that is not only better-for-you, but also delicious and super easy for a great weeknight meal that you can your kids can both feel good about...

Loaded Zucchini Skins

August 25, 2016 Amanda Plott

This is a sponsored post written by me on behalf of Tyson Foods, Inc. All opinions are entirely my own.

I'll be the first one to admit that I'm pretty much in love with zucchini and summer squash. They are possibly the most versatile and easy to work with vegetables that you'll ever encounter. You can do anything from eating them raw, to grilling, baking, steaming, and back again. I've definitely had my fair share of fun with zucchini based recipes.

With tailgating season upon us, I thought it would be a great time to try something new, fun, and a little different than what I'd done before. These Loaded Zucchini Skins are basically a lighter version of Loaded Potato Skins. Don't get me wrong, I love potatoes too, but this option is great for these end of the summer days where it's hot and you want something a little less heavy on your stomach...

Thank you SkinnyPop Popcorn for sponsoring this post. Feel good about adding SkinnyPop Popcorn to your kids' lunchbox this back-to-school season, a better-for-you snack made with ingredients your kids can spell and pronounce!

Ah! Today is the first day of first grade for my little girl, and there is definitely a big difference between dropping her off today and dropping her off for her first day of kindergarten. I think every mommy in the world knows exactly what I'm talking about too. What can I say? It was an exceptionally long and drawn out summer.

Needless to say, I was super excited about making her lunch and getting her ready last night. Of course, to keep her little mind active, I wanted to be sure that she had the tools that she needed in her lunchbox to keep her going through her day. This better-for-you lunch has everything a growing kiddo needs and wants without having to make any compromises...

Chipotle & Spinach Quinoa Cakes

August 16, 2016 Amanda Plott

I'm not sure really who knows this yet or not, but I sort of have a giant fear of eating fish. I know, I know! It's a problem that I've been dealing with my entire life. I wish that I could bring myself to eat seafood at all. So far though, I haven't found success with it. What I tend to do instead, is make an otherwise fish-related recipe into something vegetarian.

I've always been curious about 'fish cakes', since they look like they could be mighty light and tasty if done right. In the past, I've made Chickpea & Quinoa Cakes, which turned out really good. But, today I wanted to try something a little different; adding in a kick of spice and bright bold Mexican-style flavors...

Southwest Grilled Pork Tenderloin Salad

July 13, 2016 Amanda Plott

I've been challenged again this year! They say that the best cooks know how to utilize any ingredients placed in front of them. I'd like to think that my handy skills with creating 'pantry' meals from my kitchen aids me in this.

Today I put my chops to the test in this Chopped At Home Challenge with Sargento®! My goal was to create a recipe within the theme of 'grilling' using all of the secret “basket” ingredients; pork tenderloin, cherry/grape tomatoes, broccoli, and Sargento Chef Blends 4 State Cheddar. Of course, looking at the last three ingredients my mind instantly went to a chef or cobb salad. But, what to do with the pork? Being from Texas, my first thought was grilled pork with a spicy seasoned kick. The spice is what kicked this off into a twist on a southwest salad...
