Skinny 'Oatmeal Cookie' Baked Amish Oatmeal

We’re only on day two of Austin’s ‘shelter in place’ orders and it already seems like we’ve been stuck inside for a couple of months already. Though, that’s probably because of the self-quarantine that most of us had already been on for the weeks leading up to the shelter in place. Somehow amidst all the chaos my family was able to get our hands on enough pantry staples and frozen foods to last for the duration.

Beef Fajita Crustless Quiche

As of midnight tonight, we here in Austin (and surrounding areas) are on official lock down with a ‘shelter in place’ until April 13th. This comes after being under a quarantine mandate for a week or so as well. Being as times are tough for everyone, I’m trying to be super creative in how I use up leftovers and the few pantry staples that I have been able to get my hands on.

Being as we had beef fajitas a few nights ago, I had some leftover cooked beef and peppers and onions. So I thought I’d use them up in a quiche because when growing up, quiche was one of the few ways that my family would repurpose leftovers. It’s simple, easy, and delicious every time…

Healthified 'Swamp' Soup

A long time ago in a galaxy far far away... whoops! Wrong story. Ahem. A long time ago, I made this heavenly soup for my family in the midst of winter and it was an instant hit! And it still is to this day. But, the post here needed some updating so here you go!

I've made the soup a few times over the years and each time seem to make it more and more my own. While the base of the soup remains the same, I've definitely built my own little swamp here.

This soup is pretty hearty and rather filling for being loaded with basically nothing but vegetables. And no, that isn't a complaint in the least. I love my vegetables almost any which way, cooked, raw, steamed, grilled, etc…

Giant Donut Cake

My daughter is pretty much obsessed with donuts. Seriously, once a week she gets to have donuts for breakfast. Usually it’s from a local donut place, but this morning I decided to take it up a notch. I’ve been working on the notion of a giant donut cake for a while. And if you follow me over on Facebook or Instagram you may have seen my most recent attempt.

Skinny Overnight Eggs Benedict Casserole (With Blender Hollandaise)

Breakfast is the most important meal of the day, they say. And I tend to agree. If you start your day off right with a nice breakfast, the rest of the day tends to follow suit. One of my all time favorite breakfast (or brunch) items is eggs benedict. A simple breakfast bite with english muffins, eggs, and hollandaise sauce. However, with the holidays coming up, I tend to gravitate towards casseroles.

Leftover Turkey Stew

It’s hard to know exactly what to do with leftover Turkey after Thanksgiving. I’ve made soups, dumplings, and a few other things in the past. This time though, I thought I would try my hand at making a sort of stew. It was surprisingly cold here on Thanksgiving this year, which is pretty strange. The past few years, we’ve had a super sunny Thanksgiving with a high of something near 80 degrees.

This year, we were in the 50’s, it was over cast, and misty. Normally I would say it was a ‘yucky’ day, but I always enjoy cool weather on the holidays that keeps everyone indoors and cozied up together. You know, encourages us to spend family time together. With it being chilly, I thought a stick-to-the-ribs hearty stew would be the best option for turkey usage!…
