Jamaican Chili

So, I wanted some chili but with it being Spring I wanted a chili that maybe had a little more of a brightened up twist to it. That’s why I came across the idea for a Jamaican themed chili. It’s basically a pretty standard meat and bean chili that’s got all the delicious warm and bright flavors that you tend to see in Jamaican dishes.

There is some heat to this chili, but not a whole WHOLE lot. If you want it to be a touch hotter, try using a hotter pepper in place of the jalapeño. Think habanero or scotch bonnet! I’m not quite that brave myself so I stuck with the jalapeño…

It’s Spring and for me that means it’s time to play around with all things lemon and poppy seed. This Lemon Poppy Seed Chicken Salad is a fun twist on a classic chicken salad. That’s chicken salad, not chicken in a salad. Most of the time when you think of lemon and poppy seed, you think of sweet treats. But, not today!

This chicken salad is savory through and through. The bright pop of lemon and the bit of crunch from the poppy seeds really makes this a chicken salad to remember. Buffalo Chicken Potato Skins

I don’t know. I felt like I wanted some buffalo chicken potato skins.

Easy to make shredded buffalo chicken that’s stuffed into potato skins and topped off with cheddar and blue cheese. Can’t go wrong there. This is a super simple and versatile dish that could be anything from an appetizer to part of a meal. I should say too that I used the BIGGEST russet potatoes for this that I could find. Homemade Chicken Noodle Soup

What I ended up getting for Easter was an upset stomach. Boo! Oh, well. As soon as it started to settle, I went straight into chicken noodle soup mode. This Homemade Chicken Noodle Soup is exactly what my body needed too. The broth is light and there’s just enough good wholesome chunky bits in there to fill a sore stomach.

My daughter’s birthday is literally just around the corner. I can’t believe I’m about to have an 11 year old. Even so, I’m doing my very best to take this birthday extra special since, well, times are still rather strange in the world. In case you haven’t heart yet, it’s Spring! And I’m sticking to Spring themed foods for a good while. This Spring Vegetable Lasagna is a Spring infused lasagna that’s meatless and made with all the best and freshest produce that Spring time has to offer. That includes, zucchini, summer squash, spinach, and of course peas! Yes. There’s peas in this lasagna!

As strange as that may sound, this lasagna turns out bright, vibrant, and absolutely delicious. Plus, you get a whole HUGE piece for under 300 calories.
