Oh. My. Gosh. This Dark Chocolate 'Crazy Cake' is delicious, y’all! The first time I heard about ‘wacky cake’, I was more than a little skeptical. How can you make a good cake with no butter, eggs, or milk?! Well, as it turns out, there’s a couple of secrets to this cake that make it perfectly fluffy and delicious! In fact, it’s one of my favorite cakes. One of these simple swaps is using Mazola® Corn Oil in place of another oil or butter. I’ve been cooking and baking a lot more lately with corn oil. A clinical study showed Mazola Corn Oil reduces cholesterol 2x more than extra virgin olive oil. To learn more about this claim, see MAZOLA.com.
I wasn’t done there though. I also swapped out some of the sugar for a natural sweetener, and the cocoa powder for a dark chocolate cocoa powder. The end result was this tasty and easy cake that’s made all in ONE dish. Yep. No bowls to clean. No beaters to clean…
Roasted Tomato Soup
There is one thing for sure, no one is ever too old to enjoy tomato soup! One of my best memories growing up, had to have been the simple and easy dinner my mom would make on cold Fall or winter days… and that was a grilled cheese and tomato soup. Of course, even though you won’t grow out of tomato soup, your tastes do change. So today, I’ve elevated the classic and my favorite.
I’ve made plenty of tomato soup in the past, but I saw a rather ingenious hack not so long ago about making it by easily and with fresh tomatoes! No other cooking is involved other than that! Roasting the tomatoes also gives a smoky depth of flavor, that you otherwise wouldn’t have too…

It was a lazy and rainy day yesterday, and after a long 'Fall break’ weekend that was filled with plenty of fun and excitement, it was a good day to rest. I’m honestly not sure I even got out of my pajamas, and neither did my daughter. Yep, that’s just how lazy we were. This Skinny Chicken Alfredo Dip was a perfect rainy day snacky sort of dinner.
Like I said, we were being uber lazy. So cheesy chicken dip for dinner just sounded like it fit. No guilt here though! This Alfredo dip is just about as guilt-free as an Alfredo anything can be. It’s low-carb, delicious, and actually surprisingly easy to make - even from scratch!…

Spooky scary skeleton! … …I have no idea. It’s a song that my daughter sings. While these aren’t skeletons, or made of bones, these 'Tombstone' Pizza Pockets are super cute and rather easy to make too! What’s better is that YOU get to decide what goes in them and their shape - unlike those frozen-to-microwave ones. You know the ones I’m talking about. The ones filled with a bunch of scary sounding yuck.
These cute little pizza pockets are made with a whole wheat dough and are filled with the basics of any pepperoni pizza; sauce, cheese, and pepperoni! Yep. That’s basically it. A few traditional pizza favorites in a perfect and festive little pocket!…
Read MoreGreek Lemon & Chicken Soup
I really really really didn’t intend to have two soup recipes in a row, but that’s just how it turned out! Initially I made this Greek Lemon & Chicken Soup a week or two back as a test recipe, and it was so good that I just couldn’t help but make it again sooner than later. Especially as we’re rolling on into cooler weather and soup season.
For being a soup, this one is on the lighter and brighter side of the spoon with lemon and feta in it. Which can be a good thing as we travel on into winter and start in with those dreaded winter blues. Eh… who am I kidding? We don’t generally have time in winter to get the winter blues here in Texas, but I know there are some of you that do!…

It’s no secret that Halloween my favorite holiday and I always like to do something a little special for it. My little girl is quite a pancake fiend. I would venture guess that she eats pancakes for breakfast just about every other morning. Except for Saturday; that is 'donut' day around here.
At any rate, with all the great pumpkin flavors going around this time of year, I thought it would be a great time to make a healthier pumpkin pancake!
No matter your age or pancake preference, these whole wheat pumpkin pancakes are a great way to start off any Fall morning! They are really easy to mix up and cook. Plus, they taste amazing with just a subtle hint of pumpkin and spice in there…
