Well, I officially have a 10 year old! It may be a weird time in our world to be having a birthday, but you better be damn sure that I wasn’t about to let anything get in the way of my daughter having the BEST time while turning the big 1-0.
My inspiration for this cake came with us deciding to have a ‘disco dance party’ for the birthday. And what goes better with disco other than tie-dye. Between that and remembering my Dark Chocolate ‘Crazy Cake’ so fondly, I decided to put the two together…
Whole Wheat Sugar Cookie Bars
In the midst of chaos, I managed to get my hands on some pretty sprinkles! And what does a girl do with sprinkles? She bakes up a sweet treat and uses the sprinkles for decoration! These Whole Wheat Sugar Cookie Bars are perfectly delicious while being made just a little better-for-you by using whole wheat flour and some natural sweetener in place of sugar.
The best part is, you still get frosting with these cookie bars! Yep, that’s right, these thick, fluffy cookie bars are topped with what I think is a perfect layer of homemade frosting. Not too thick, not too thin, and adds just the right amount of sweetness…

I realized that it had been a hot minute since I made any sort of unicorn inspired recipe, so… I had to fix that today. When I said I was going to keep things fun and bright during Spring Break here, I wasn’t kidding! This Rainbow Unicorn Swiss Roll is as delicious as it is pretty.
This is a vanilla based cake that’s colored in the best of ways and rolled up with a lightly sweetened cream cheese filling. It’s great as a sweet breakfast option, brunch, or even as dessert. Really there wouldn’t be any bad time of day to have rainbow amazingness in your life…

St. Patrick’s Day is coming and being as it’s also my dad’s birthday, I thought there would be no better time than now to make a delicious Irish take on a chocolate cake. What makes it Irish? Irish whiskey, of course! That’s right, this homemade from scratch chocolate cake has Irish whiskey baked RIGHT IN to the cake itself.
It ends up being a rich almost dark chocolate tasting cake that has the texture of a pound cake. The best part is that it’s pretty easy to make and it’s even lightened up! So how does one make a chocolate cake better-for-you anyway? Well…

And just like that, this is the last post of not only the this year, but of this decade!
I decided that with this being the last one of the decade, I thought I would take it a step further and make this recipe even more special by including my little mini-me in on it. I mean… she has two and a half weeks off from school and I need to entertain her somehow, so I put her to work making cookies and writing about it.
So, we sat down and planned out what exactly we’d make. She happened to a book on ‘kids cookies’ a few months back and so that’s where we started. Within the book there’s a recipe for some chocolate cut-out cookies, and that was our inspiration for today! These Kid-Friendly Chocolate Cut-Out Cookies are easy to make and require just a few ingredients, plus they end up tasting just like the cookie part of those famous sandwich cookies we all know and love. We definitely made a few easy substitutions to make these cookies just a little more healthy…

While it’s cold enough outside for a few more months, I’m planning on doing a lot more baking and using up precious oven time while I can. The heat of the summer (and sometimes spring) often keeps from being able to comfortably bake anything. At all. Ever. To keep on theme with the Holidays, I thought I would whip up a festive bread for breakfast this morning.
This Cranberry Orange Bread is loaded with flavor, the freshness of the orange and the tartness of the cranberry pair well with the sweetness of the bread. Plus, it’s pretty easy to toss together in the morning and bakes for a good amount of hands off time…
