Today my daughter is at her first cheer camp to learn all she needs to for cheerleading at her middle school this year. What does that mean? Back-to-School is hot my heels and it’s time to roll out those easy to do one pot dinners. This Chicken Pot Pie Casserole is just that. It gives you all you expect out of a chicken pot pie, but without having for fuss and worry with pie dough!

This casserole starts off with a pretty standard roux that you then add veggies and chicken to. It’s all topped off with some biscuit dough and baked together to make one delicious dinner that’s put together and done in no time at all…

Craving for something easy and cheesy? Look no further! This Zucchini Cheeseburger Skillet is easy to make, all in one skillet, and has all the cheesy goodness of a cheeseburger without any of the guilt. I based it off the same idea as my Zucchini Taco Skillet, but used cheeseburger components instead of taco. The end result was this burger in a bowl.

I made sure to load this skillet up with plenty of veggies, zucchini, onion, lettuce, and even some fresh tomato! Like I said, this has everything you love about a cheeseburger, even pickles! It starts out with meat and onion, then there’s tomatoes and seasonings, and it’s all followed up with zucchini and condiments!…

Vegetarian Meatloaf & Macaroni Casserole

So, I saw the idea for this casserole the other day and just knew that I was going to have to make it myself and in my own way. First of all, I didn’t need a 13x9'“ dish casserole since my family unit is small and, while I force leftovers, there’s only so many days in the week. That’s why I halved the recipe right off the bat.

I also work really hard to limit the amount of meat we eat, so I thought it would be pretty fun to try and make a meatloaf into a vegetarian dish. I guess you can just call me crazy. But, I’m happy to report back that it totally worked out and it worked out SO well…

Looking for a quick dinner idea? Look no further! This Queso Chicken Bake is here just for you! And when I say queso, I do mean queso! Just look at his cheesy an delicious this chicken is! I should note too, it doesn’t get more simple to easy than this toss and bake recipe either. with just 5 ingredients, you can have dinner tossed together and ready to go in no time at all!

Being as this dish is so simple and has so few ingredients, there isn’t much to change here other than to swap some of the things out for ‘no salt added’ or ‘low sodium’ options. This way you can season it yourself to your own liking. Which I almost guarantee is less salt overall…

It is simply that I don’t want seafood in my mouth. It’s one of my many strange little quirks.
