So I was talking to a good friend of mine the other day about ‘comfort food’ and they brought up the fact that they grew up with their mom calling chicken and dumplings ‘chicken pot pie’. Fast forward a few days and I came across PA Dutch Chicken Pot Pie - which I thought was funny since my friend who mentioned chicken pot pie is from PA. Of course I immediately sent the recipe to my friend for them to confirm and low and behold it was exactly what his mom used to make.

Looking for ideas on what to do with your leftover turkey this year? Well, look no further! This Turkey Pot Pie & Stuffing Crust is here to save the day - and the leftovers! The filling for this pot pie starts off with some of the usual suspects; cooked turkey, onion, celery, and more veg! I used some frozen veggies since I don’t yet have Thanksgiving leftovers, but fresh could work too if you' do have leftovers from the big meal of the year.

Season this entire thing through and you’re golden. This whole thing is topped off with a stuffing crust. Okay - it’s not stuffing, it would technically be dressing since it’s not being stuffed into anything here. Anyway! This too you’ll want to be sure is properly season, and you’ll want to do it BEFORE you put the raw egg in it. Biscuit & Gravy Pot Pie

Sometimes you just need a good comforting breakfast. And this Biscuit & Gravy Pot Pie is about as ‘comfort food’ as you can get. With a homemade turkey sausage gravy and biscuit topping, you just can’t go wrong! It’s perfect as a weekend breakfast or brunch. But, it also makes for a pretty good breakfast through the week since it reheats pretty well.

It’s lightened up just a bit by using a turkey breakfast sausage and also unsweetened almond milk in place of other milks. Though, you can really use any sort of milk that tickles your fancy. I just like this almond milk because it gives me more bang for my buck calorie wise…

Chicken Pot Pie Casserole

Today my daughter is at her first cheer camp to learn all she needs to for cheerleading at her middle school this year. What does that mean? Back-to-School is hot my heels and it’s time to roll out those easy to do one pot dinners. This Chicken Pot Pie Casserole is just that. It gives you all you expect out of a chicken pot pie, but without having for fuss and worry with pie dough!

This casserole starts off with a pretty standard roux that you then add veggies and chicken to. It’s all topped off with some biscuit dough and baked together to make one delicious dinner that’s put together and done in no time at all…

Individual Pizza Pot Pies

Yep! Pizza in the form of a pot pie. Turned upside down into a delicious individual bowl of pizza goodness. This pizza pot pie makes it’s very own pizza crust bread bowl that is perfect for a single serving of cheesy sauce ‘deep dish’ style pizza!
