So obviously, I’m not an Italian lady. My roots are a lot Irish and … well, as many others out there, a plethora of other things. That being said, my love of food stems very much so from my fond memories of sitting on my great-grandma’s kitchen counter and watching her cook for hours on end.

Lengthy cooking times tend to be a thing of the past these days, especially with our fancy gadgets like crock pots and pressure cookers. Trust me, I’m a HUGE fan of the quick and easy recipes, but I’m here to warn you that THIS recipe is not quick by any means. I’ve taken lasagna roll-ups and given them a Tex-Mex kick. I guess you could call it Tex-Italia! Since we’re in the midst of Oktoberfest, I thought it was high time to create an Oktoberfest inspired recipe. Beer included! Don’t worry though, even with the beer in this stew, the whole thing is just about as guilt free as you can get with a meal.

You really do get all the flavors of Oktoberfest in one bowl here. Cabbage, sausage, potatoes, and of course… lager beer! I used an Oktoberfest beer, but a lager or any other ‘German’ beer would be perfect to use as well…

A one pot meal, in the Instant Pot, for under 350 calories? Yep! You got it dude. This lightened-up meatloaf AND mash is made in the Instant Pot in just 25 minutes. And you know what? I think I may just stick to cooking my meatloaf in the Instant Pot from this day forward. It’s quick and easy to do, plus it locks in all the moisture and juices so you don’t run the risk of ending up with a dried out meatloaf for dinner!

Sparkler Dogs

The 4th of July is already a pretty big holiday. But, it’s also right there in close to my mom’s birthday and is yet another one’s favorite holiday in the family. So, for us?
