Who knew that such a delicious meal could be made with just 5 simple ingredients and 3 hours of hands-off cooking time? Well, this girl! As we’re getting closer to Summer here in Texas, I’m starting to already use my stove and oven less and less. It’s freaking HOT here already, y’all! 'Everything' Egg Bites

It’s just been an EVERYTHING kind of week so far. You know? Everything Deviled Eggs. Everything Pigs in a Blanket. And now… Everything Egg Bites!

Sort of like with the Everything Deviled Eggs the other day, I added a touch of cream cheese to the egg bites this time to give that subtle taste and richness that one would get with an everything bagel with cream cheese.

I also put some bacon in there because…everything is better with bacon! And there’s just enough ‘Everything’ seasoning in there to give the flavor without overpowering everything else…

This morning I woke up to a rather quiet house after FINALLY managing to get a decent bit of sleep last night. The excitement around the holidays, along with all the coming and going from my house, usually means several restless nights for me. Now with Turkey Day out of the way, I’m ready to get back into a routine for a few weeks.

My fridge once again has space in it and leftovers have all cleared out but now. With a few extra hungry mouths this morning, I started to panic as I rummaged through the pantry, fridge, and freezer for something breakfasty. FAIL. All I had was pieces and parts. The start of school means the end of summer, right? Right?! I have to say, that I have just about reached my limit on the heat over here in Texas right now. And I am more than ready for the cooler days of fall that are headed our way. Hopefully sooner than later. It's 100 degrees + here right now and I just can't anymore.
