If you think beets are just for the salad bar at your local deli or an intimidating root vegetable to roast, it’s time to think again. This Roasted Beets & Sweets Salad takes humble ingredients and turns them into a dazzling, health-conscious dish that's as vibrant as it is delicious. Welcome to a salad that doesn’t just want you to eat your veggies—it needs you to love them.

Why Roasted Beets?

Beets are nutritional powerhouses loaded with fiber, folate, vitamin C, and antioxidants that help keep your blood pressure in check and your body happy. Roasting them brings out their natural sweetness, makes them tender, and amps up the flavor from earthy to downright scrumptious.

The "Sweets" Part: Sweet Potatoes to the Rescue

Roasted sweet potatoes add that warm, mellow sweetness and create a gorgeous orange contrast to the deep ruby-red beets. Plus, sweet potatoes are packed with beta-carotene (hello, vitamin A!), fiber, and immune-boosting vitamin C. Together, beets and sweet potatoes are like the superhero duo of the root vegetable world.

Why This Salad Rocks for Your Health and Your Plate

  • Fiber-packed to keep your digestion happy.

  • Antioxidant-rich to fight those pesky free radicals.

  • Low in calories but high in satisfaction, so you can dig in guilt-free.

  • Colors that make your Instagram pop—because food should look as good as it tastes.

Bonus Tip: Make It a Meal

Want to turn this beauty into a full-on meal? Add grilled chicken, chickpeas, or even a poached egg on top. Your taste buds and body will thank you for the balance of protein and veggies.

So there you have it—Roasted Beets & Sweets Salad is the perfect example that healthy doesn't mean boring. This vibrant, nutrient-packed salad is proof that you can have your root veggies and eat them too. Next time you’re planning a meal or looking to impress with a guilt-free dish, give this salad a whirl—and watch it steal the spotlight.

Stay quirky, stay healthy, and most importantly, keep eating like a boss!

This Roasted Beets & Sweets Salad takes humble ingredients and turns them into a dazzling, health-conscious dish that's as vibrant as it is delicious.

Ingredients

  • 2 Large Fresh Beets (With Stems & Leaves)
  • 1 Large Sweet Potato
  • 3 Tbsp. Extra Virgin Olive Oil
  • 8 Oz. Stracciatella Cheese (Or Burrata)
  • Salt & Pepper to Taste

Instructions

  1. Preheat the oven to 400 degrees F. and line a baking sheet with foil, parchment, or a silicone mat.
  2. Remove the stems and leaves from the beets and scrub them clean. Pat the beets dry, coat them with some extra virgin olive oil, and wrap the beets in foil; set them on the prepared baking sheet.
  3. Peel the sweet potato and cube into 1/2-1" pieces and toss with a drizzle of extra virgin olive oil and salt & pepper to taste. Place the sweet potatoes onto the prepared backing sheets with the beets and place in the oven to cook for 20 minutes, stirring the potatoes around about halfway through the cook time.
  4. Once done, remove the beets from the sheet plan and keep them in the oven. Set the baking sheet with the sweet potatoes out to cool slightly.
  5. While the beets are finishing cooking for another 40 minutes or so, clean and chop the beet stems and leaves.
  6. When the beets are done, remove from the oven and allow them to cool enough to handle. Once cooled, remove the skins from the beets (they should just slide right off) and chop.
  7. Heat a medium skillet over medium-high heat and lightly coat the inside of the skillet with non-stick spray.
  8. Add the chopped stems to the skillet and cook for about 5 minutes or until starting to soften.
  9. Toss in the chopped leaves and stir until wilted; season with salt & pepper to taste.
  10. Place the 8 Oz. Stracciatella Cheese and Salt & Pepper to Taste in a small bowl.
  11. Divide the cheese evenly among plates and top with the beets, sweet potatoes, and stems and leaves, also divided evenly.
  12. Enjoy right away!
