Roasted Beets & Sweets Salad
This Roasted Beets & Sweets Salad takes humble ingredients and turns them into a dazzling, health-conscious dish that's as vibrant as it is delicious.
Ingredients
- 2 Large Fresh Beets (With Stems & Leaves)
- 1 Large Sweet Potato
- 3 Tbsp. Extra Virgin Olive Oil
- 8 Oz. Stracciatella Cheese (Or Burrata)
- Salt & Pepper to Taste
Instructions
- Preheat the oven to 400 degrees F. and line a baking sheet with foil, parchment, or a silicone mat.
- Remove the stems and leaves from the beets and scrub them clean. Pat the beets dry, coat them with some extra virgin olive oil, and wrap the beets in foil; set them on the prepared baking sheet.
- Peel the sweet potato and cube into 1/2-1" pieces and toss with a drizzle of extra virgin olive oil and salt & pepper to taste. Place the sweet potatoes onto the prepared backing sheets with the beets and place in the oven to cook for 20 minutes, stirring the potatoes around about halfway through the cook time.
- Once done, remove the beets from the sheet plan and keep them in the oven. Set the baking sheet with the sweet potatoes out to cool slightly.
- While the beets are finishing cooking for another 40 minutes or so, clean and chop the beet stems and leaves.
- When the beets are done, remove from the oven and allow them to cool enough to handle. Once cooled, remove the skins from the beets (they should just slide right off) and chop.
- Heat a medium skillet over medium-high heat and lightly coat the inside of the skillet with non-stick spray.
- Add the chopped stems to the skillet and cook for about 5 minutes or until starting to soften.
- Toss in the chopped leaves and stir until wilted; season with salt & pepper to taste.
- Place the 8 Oz. Stracciatella Cheese and Salt & Pepper to Taste in a small bowl.
- Divide the cheese evenly among plates and top with the beets, sweet potatoes, and stems and leaves, also divided evenly.
- Enjoy right away!
