Ingredients

  • 1 Zucchini, Diced
  • 1 Pt. Cherry Tomatoes, Halved or Quartered
  • 1 C. Pitted Kalamata Olives
  • 1 Yellow Bell Pepper, Diced
  • 1/2 Medium Red Onion, Diced
  • 1/2 C. Crumbled Reduced Fat Feta Cheese
  • 2 Tbsp. Extra Virgin Olive Oil
  • Splash Red Wine Vinegar
  • Salt & Pepper to Taste
  • 1 Bunch Fresh Basil, Sliced or Chopped

Instructions

  1. Toss together the 1 Zucchini, 1 Pt. Cherry Tomatoes, 1 C. Pitted Kalamata Olives, 1 Yellow Bell Pepper, 1/2 Medium Red Onion, and 1/2 C. Crumbled Reduced Fat Feta Cheese.
