Whole Roasted Cauliflower with Tahini Butter Sauce

Turmeric roasted cauliflower with a creamy tahini richness without the need for heavy cream, and a slightly nutty flavor that adds depth.

Ingredients

  • 1 Whole Head Cauliflower
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 Tsp. Turmeric
  • 1 Tsp. Cumin
  • Optional Toppings: Flake Salt, Crushed Pistachios
Tahini Butter Sauce
  • 2 Tbsp. Butter, Softened
  • 1 Tbsp. Tahini
  • 1 Tsp. Miso Paste

Instructions

  1. Line a baking sheet with foil, parchment, or a non-stick baking mat and a wire rack; set aside. Fill a large pot with 3 inches of water and bring it to a boil. Rinse and trim your cauliflower, then once the water is boiling, lower the cauliflower into the pot. Cover and reduce heat to simmer for about 8 minutes.
  2. Once done, remove the cauliflower to the prepared baking sheet and allow to cool for 15 minutes or up to two hours ahead of time.
  3. When ready to fully cook, preheat the oven to 450 degrees F, and remove the wire rack and set the cauliflower on the baking sheet.
  4. Drizzle with the 2 Tbsp. Extra Virgin Olive Oil and use clean or gloved hands to fully cover the head of cauliflower.
  5. Sprinkle that 1 Tsp. Turmeric and 1 Tsp. Cumin over the cauliflower and once again use your hands to rub it into the entire head.
  6. Set the baking sheet in the oven to bake for about 40-45 minutes.
  7. While the cauliflower is cooking, stir together the 2 Tbsp. Softened Butter, 1 Tbsp. Tahini, and 1 Tsp. Miso Paste.; set aside.
  8. When the cauliflower is done cooking, remove it from the oven and drizzle with the tahini butter sauce.
  9. Cut and serve right away with any additional toppings such as Flake Salt, Crushed Pistachios, or even chili flakes or chili garlic crunch!
