Sticky Tahini Potatoes (With Chili Crunch)

Ingredients
- 2 Medium-Large Sweet Potatoes
- 2 Tbsp. Room Temperature Butter
- 1 1/2 Tsp. Tahini
- 1/2 Tsp. Miso Paste
- 2 Tbsp. Maple Syrup
- 1 Tbsp. Apple Cider Vinegar
- 1 1/2 Tsp. Gochujang
- 1 1/2 Tsp. Toasted Sesame Seeds
- 1 1/2 Tsp. Pine Nuts
- 1/2 Small Handful Cilantro, Chopped
Instructions
- Cook your 2 Medium-Large Sweet Potatoes how you like; bake, slow cooker, instant pot, etc. (I pierce mine all over, brush with oil, sprinkle with course sea salt, and cook in the instant pot for 45 minutes.)
- While your potatoes are cooking, whisk together the 2 Tbsp. Room Temperature Butter, 1 1/2 Tsp. Tahini, and 1/2 Tsp. Miso Paste; set aside.
- In a small cooking pot, place the 2 Tbsp. Maple Syrup, 1 Tbsp. Apple Cider Vinegar, and 1 1/2 Tsp. Gochujang. Heat over medium-high heat and bring to a bubble. Reduce the heat to medium-low and simmer for about 5 minutes, or until thick and sticky.
- Fold in the 1 1/2 Tsp. Toasted Sesame Seeds and 1 1/2 Tsp. Pine Nuts.
- Once the potatoes are done, cut in half and pop open.
- Divide the tahini butter mixture evenly among the potatoes.
- Then divide the sticky garlic crunch evenly among the potatoes.
- Sprinkle the Chopped Cilantro over the top and enjoy right away!
