Healthified Cowboy Spaghetti

One of my families favorite recipes growing up was my mom's Cowboy Spaghetti. In fact, it is so much a favorite that we all still ask her to make it for us even to this day. I've been trying for a couple of years now to make the recipe more better-for you without compromising the taste of it. Which oddly enough has been somewhat of a challenge, especially when it comes to getting my mom's seal of approval on the end result.

I always ended up adding too much vegetables or... somehow changed the flavor too much for it to be dubbed the famous 'Cowboy Spaghetti' in any way, shape, or form. So, once more I went back to the drawing board. I left the base of the recipe entirely pure to it's original with just a few minor tweaks here and there...

Spicy Chipotle & Poblano Spaghetti

Mother's day is nearly upon us! I'm pretty excited because I've got some fun things planned, for not only me but for other special women in my life. I'm fortunate enough to have four generations in my family right now of ladies that are all perfectly beautiful and amazingly inspiring to me.

The first is my grandmother (we call her Neenaw around here though!) She's a fierce little firecracker bundled up into a cute little blonde that gives some of the most amazing hugs on the plant! Don't let her short stature and usually quiet demeanor fool you though, much as myself, she's a live-wire.

The next is my mother who is a unique, quirky, effervescent and bubbly spirit that I could only do justice by comparing to a fine champagne! She's all about fun. I mean, her favorite color is 'glitter', how fun is that? She's as beautiful as they come, both on the inside and the out; an old soul that just wants everyone around her to be happy!

I'm the third generation. A well blended combination of the other three.

Finally, there's my little girl. Not that I'm bias or anything, but she's pretty amazing! What can I say? She's a girl after my own heart. She knows what she wants and gets it; as hard headed as they come. This one is against the grain, her favorite color is blue and she's the only left-handed person in our family. How's that for standing out?...

Chicken Bacon Ranch Macaroni & Cheese Casserole

My little one is a macaroni and cheese fiend... and also one of the most strangely picky eaters that I've ever known. For most of her five years go life, my little girl has been a vegetarian for the most part. Of course, it's not been a conscious decision on her part or for any other reason than the mere texture of meat. Apparently it's a pretty common trend among toddlers and preschoolers.

I can't say that I was much different when I was about her age. I drank water instead of any soda or juice, and had to be told that meat came from a meat tree and not from an animal. I also required that all meals be cooked by my mother. Yeah, I've always been a bit special about food.

Over the past few months, my little girl has made some great strides in adding more and more to her list of acceptable foods. I'd like to think that it has a lot to do with the fact that I encourage her to spend time with me in the kitchen. I also do my best to encourage her to simply try new things. No pressure though!...

Spinach & Pea Tortellini

The first time that I ever remember eating tortellini was probably back when I was in junior high (yikes - maybe even further back than that!) My dad must have been in charge of dinner that night because I remember he was the one standing at the stove cooking up those perfect little tender shells stuffed with fresh cheeses. And yeah, he even used BUITONI® pasta back then too.

Now, of course he is and has always been a much different home cook than myself. He had made something that was a little heavier; some sort of Alfredo sauce to go over the tortellini and green peas, which was then topped off with some bits of bacon. Talk about decadent, but at least he had some green in there!

It was one of the most amazing things that I had ever tasted.

I'm not sure where he got the original recipe idea from, but I know that for one reason or another that meal still stands out in my mind today...

Whole Wheat Lasagna Roll-Ups

Yes, that's right... you can have your lasagna and eat it too!

What's better is now you don't have to feel guilty about indulging in it anymore. Most places I looked, a typical serving of one lasagna roll-up was anywhere between 350-550 calories. What?! That's madness!

If you're going to have pasta, you better at least do it right and make those carbs and calories well worth it. With this lightened up version of lasagna roll-ups, you won't feel like you're missing out on anything and that's because you're not!

These noodles are loaded with cheesy spinach goodness. They're rich, decadent, full of flavor, and even more full of vegetables...

Pesto & Chicken Tortellini Soup

A while back I made this Tortellini en Brodo soup, which is not only one of my favorites, but also a favorite of my mothers. I could seriously eat that soup at least once a week for the rest of my life and never get tired of it. Yes. It's that good.
