Veggies in the Raw Bistro Box

It's been a good while since I worked on my skills at adult lunch boxes or 'bistro boxes' as I've seen them called. I've made a few in the past, and I've always enjoyed them for more than one reason.

I love that these bistro boxes are small, filling, packable, and so easy to whip up a few of them to have on hand through out the week. I've found that if I have to make my lunch every day that I will tend to either skip it all together (which is a bad idea) or trade out my more health conscious lunch for something that's quicker and more grab-and-go (even worse!)

When I have my little prepped bistro boxes though, I don't have any excuse to not sit down and enjoy my wholesome and stackable style meal...

Healthy Fall 'Green Egg' Scramble

So, I've been eating this for a few days a week for breakfast for a while now. I wanted something that was filling, would power me on through my day, but not be overly heavy. This has been the perfect breakfast bowl for me. It's full of fall flavors with the brussels, pumpkin seeds and the cranberries, but still so very healthy.

When my mom was here this past week, she saw my bag of strange looking shredded brussels and kale and quickly pulled it out of the fridge to ask 'What is this?!' I explained to her what it was and she gave me a pretty strange look. I can see and feel the change in the seasons rolling through. Finally, there's some relief from the hot summer days as we get cooler weather here in Texas. Whoohoo! I think the high here today is only 88 degrees F. In honor of the cooler weather, I thought it would be nice to make a warm pot of ramen soup.

Skinny Greek Yogurt Egg Salad

Wholesome snacking and healthy eating in general has been important to me and my family for all of my adult life. One of my favorite better-for-you swap out staples is greek yogurt. I find that I can substitute greek yogurt for not only sour cream, but also generally for any recipe that calls for mayonnaise as well.

It makes a pretty great substitute when baking as well.

Egg salad one of my most favorite 'guilty pleasure' snacks. So today I decided to lighten it up and make it my own by incorporating greek yogurt. I'm sort of a traditionalist when it comes to egg salad, being that I basically like for it to taste like a well combined deviled egg, another 'guilty pleasure' of mine...

Skinny Spinach & Sundried Tomato Omelette

This yummy vegetarian and gluten-free omelette is a great thing to wake up to. Seriously, I can't think of much else that I'd rather wake up to. I promise that you won't miss any meat here either, and as an added bonus it's still pretty packed with protein and good-for-you things; spinach, tomato, and even some mushrooms!

Breakfast has been a tricky meal for me lately. Somewhere between work and being a mommy, it's one of the last things that I happen to think about. And often by the time I have the time to make breakfast for myself... it's time for lunch!

I guess that's why I'm more of a brunch person.

That and brunch also comes with a mimosa or bloody mary!...

Eggs in Pepper Rings

I know, I know... I've been doing a lot with pesto lately. My basil plant is slowly but surely taking over the back yard again this year. What better to do with it than to make some yummy Skinny Spinach & Basil Pesto?

I've done the whole Lighter Egg-in-a-Basket thing, but I've been trying to be a little more gluten conscious lately. So, I thought to myself... why not take the same idea, but use a vegetable instead of the bread? Perfect! Bell peppers work great for this. They are firm and hold up well with the cooking process, since they don't sweat or soften too awfully much in such a short amount of time.
