My daughter and I were singing Rudolph all morning long! While eating breakfast, while driving to school. I'm a little scared and also excited that come Friday, I'll have her home for two and a half weeks of winter break! Now... ask me at the end of the two and a half weeks to see if I still feel the same about that.

The holidays are always a fun time, especially when you've got little ones running around with all of their excitement. There is something to be said about homemade gifts, and I've always said that. They mean the most to me and always have. I would much rather have something that I know someone spent the time, effort, and thought into... than anything else! I'm not entirely sure why, but I just haven't been able to focus well lately. Everything has turned out really tasty, but my photography skills have just not been up to par. That means that I have to work twice as hard and it all becomes some vicious circle. Needless to say, this is now the third attempt at a decent and cohesive recipe post this week.

To say that I've exhausted myself, would be an understatement.

Even with all of that being said, I finally had success. Huge success. And all with this amazing Healthified Pumpkin Chocolate Chip Banana Bread! The heat of the summer is definitely upon us! Whenever it's humanly possible, I'm steering clear of using my oven and stove at all right now. I've been focusing on staying cool with little or no cook meals, or things that can be grilled outside. Even so, I'm dreaming of the cooler months to come. The summer heat here in Texas can be brutal.

So, what's the first thing that comes to mind when you think of winter, snow, and the Holidays? ... Hot chocolate, of course! Trust me, I'll be all over hot chocolate when the time comes, but for now - it's all about this Skinny Frozen 'Hot Chocolate'! Eee! I'm so excited to be sharing one of my most cherished childhood movies with my little girl this week that I just had to celebrate with the perfect movie night snacks! The Land Before Time movies are ones that I watched regularly when I was about my daughter's age.
