These Pumpkin Oat Muffins will blow your mind! there’s no flour used in these muffins. Meaning if you buy gluten-free oats, that makes these muffins gluten-free on top of already being vegetarian and dairy-free! One of the best parts is that these muffins are so easy to make.

I think, just like most out there, I generally go in and out of wanting sweet or savory for breakfast. Most days, savory wins out. This week though, I was in a sweets sort of mood! These Blueberry Oat Bars couldn’t have hit the spot any better. They’re sweet, tart, and perfectly acceptable for breakfast, brunch, or even dessert!

These oat bars are surprisingly easy to make, with really just a handful of pretty standard staple items too. There’s little mixing and no cooking involved. Just a few stirs and some time to bake. Plus, they’re low sodium, vegetarian, and dairy-free too. Good stuff all around…

‘Tis the season. …Gingerbread season, that is!

Gingerbread is the spice of life, especially as we get closer to Christmas and the New Year. I took a leap of faith last week and ordered some vegan almond ‘egg nog’ from one of my favorite almond milk creators. They’re local here to me in Austin Texas, and while I like the flavor of egg nog… raw egg in my drink sorta… freaks me out a little bit.

So with my vegan almond milk in hand, I decided that I needed some granola to go with it. I’ve made a lot of granola lately. Lemon Poppy Seed Granola

I'm so happy it's spring time finally. I seriously love all the bright flavors of citrus and the beautiful berries that I'm seeing at the store; like these jumbo blueberries that I got this past week. I mean... just look at those suckers! They are the size of two or three whole almonds. Yowza! Some of my favorite spring flavors have to be lemon and blueberry, so naturally I wanted to pair my giant blueberries here with something bright and lemony!

It's been a while since I baked up some granola, so I thought it was high time to make a fun 'Spring' granola that's loaded up with the good stuff. Poppy seeds along with some chia seeds, almonds, and oats. The honey I used for this was a 50/50 blend of honey and stevia; giving me less calories and the same flavor. Skinny Edible Monster Cookie Dough

It's still really hot here in Texas right now. Seriously, it was 80 degrees upstairs in my house last night. ...And that was after the sun set. So, clearly I'm staying away from the oven as much as humanly possible for a few more weeks. In the mean time...
