It's the new year and we're all making strides towards our health goals right now. Hooray! This year, along with still eating a bit less meat, I'm also lowering my carb intake. While I've got no plans to be plant-based entirely, I always figure the more plants in my life, the better.

Crockpot Carrot Soup with Basil Herb Oil

I'm barely a week into summer break over here and I already seem to have lost track of what day it is. Is it still the weekend? Almost the weekend again? Where am I? What am I doing? One of the only things that's managing to keep me somewhat grounded, is cooking. For the past few weeks, I've been getting loads and loads of carrots in my local box of produce. I've been trying to use them up as quickly as I could, but... the bag of them only continued to expand.

I've got to be honest, raw carrots are definitely not one of my favorite vegetables. So, thinking of a way to use up over 2 pounds of carrots was a rather daunting task for me. Especially considering that I wanted to be sure to use them all up before any went bad. Waste not, want not...

It's meatless Monday and we're rolling it over into taco Tuesday! No matter when or where you have these Vegetarian Crunchy Tacos, you're sure to love them. For the past couple of months we've had 'Taco Tuesday' for dinner in my house, and I'll be honest in saying that I've tried out several different variations of tacos among all of those Tuesdays. However, none can quite compare to the traditional and classic crunchy taco.

Crispy Tofu & Roasted Vegetable Buddha Bowl

It's National Soy Foods Month, and I couldn't be more excited. I've been working pretty hard lately to try and meet a more plant based diet. So to celebrate, I've created a perfectly light and flavorful plant powered Buddha bowl!

This Buddha bowl (or Hippie Bowl) has a base of purple cabbage, it's layered on top with roasted vegetables (brussels sprouts, butternut squash, and edamame) and crispy tofu fries that were paired with a perfectly spiced Skinny Sriracha Aioli - perfect for dipping! Grapefruit is very much so in season here in Texas right now, and as such, I wanted to make full use of it since it's one of my most favorite circus fruits. Lately I have been trying to be a lot more mindful, especially with my time. It seems as if the older I get, the less minutes and hours there are in my day. Life has been whipping my tail lately and it all seems like such a blur. So, to help slow things down I decided to make this super easy vegan squash bowl.
