It's the new year and we're all making strides towards our health goals right now. Hooray! This year, along with still eating a bit less meat, I'm also lowering my carb intake. While I've got no plans to be plant-based entirely, I always figure the more plants in my life, the better.

This Bunless Breakfast Sandwich really hits the spot. It's cheesy and rich and full of flavor. It satisfies any craving you might have for the real deal while being surprisingly guilt-free. What's even more impressive is that this bunless wonder is also... wait for it... meatless. *GASP* And and and, it's loaded with plant-based protein! Plus, it's quick and easy to make for a grab-and-go breakfast bite that will help me and my family in our healthier lifestyle journey this year.

I started my sandwich off with MorningStar Farms® Original Sausage Patties from the Value Pack, but you couldn't go wrong with the MorningStar Farms® Maple Flavored Sausage Patties here either! MorningStar Farms® veggie sausage with plant protein power is the better for you way to start your morning off right. They are de-lic-ious. In my opinion, this is the easiest and best way to substitute veggies for meat in a meal, like I've done here for this sandwich.

My first experience with MorningStar Farms® products was probably back when my brother with a vegetarian. I quickly fell in love with the taste and convenience they offered as an "as-is" meal solution. They are not only for vegetarians - they are for everyone! Busy moms and foodies alike.

This is a super versatile breakfast sandwich,so feel free to change it up by adding some of your favorites, like wilted spinach, salsa, etc.

The Skinny:
Servings: 2 • Size: 1 Sandwich • Calories: 358 • Fat: 30 g • Saturated Fat: 9 g • Carb: 5 g • Fiber: 3 g • Protein: 19 g • Sugar: 1 g • Sodium: 540 mg

Ingredients:
4 MorningStar Farms® Original Sausage Patties
2 Whole Large Eggs, Lightly Beaten
1 Slice Cheddar Cheese, Cut into 4
1/2 Avocado, Mashed
Salt & Pepper to Taste

Directions:

Heat a medium skillet over medium heat and cook the MorningStar Farms® Original Sausage Patties according to package directions.

Lightly coat a small skillet with non-stick spray and cook the eggs to scramble over a medium heat. Season with salt and pepper to Taste.

Once the sausage is almost done, top each with one piece of the cheese and continue to cook to melt.

When the cheese is melted and eggs are cooked, build your sandwiches.

Top two of the sausages with avocado and sandwich the scrambled eggs in between.

Serve right away and enjoy!

I found both MorningStar Farms® Maple Flavored Sausage Patties and MorningStar Farms® Original Sausage Patties Value Pack in the freezer section of my local Walmart among the entrees.
