2 Ingredient Cookies

I didn’t think it could be done, but yes - cookies can be made with a mere two ingredients. These 2 Ingredient Cookies are super east to make, because it’s just two ingredients, and they’re great as a snack, or even for part of a breakfast or lunch. So what are the two ingredients? Oats and banana. The oats do need to be quick oats and the banana has to be overly ripe. Other than that? There’s nothing more to them!

There aren’t any tricks to these cookies. They do end up being vegan, vegetarian, dairy-free, low fat, and bunch of other things that make them into not only one easy cookie, but a healthy one too. Dill Pickle Pasta Salad

So… just hear me out. Pickle flavored stuff has kind of become the trendy thing these days and let me just say, I don’t mind it at all. I love me a good pickle. Dill pickle that is. None of that sweet bread and butter nonsense. This Dill Pickle Pasta Salad is pretty amazing. It’s light, tangy, and super easy to make too.

I know it might sound a little weird at first, but I promise it’s one of the best pasta salads I’ve ever had. And I’m southern so I’ve had a lot of different kinds of pasta salad. I lightened this pasta salad up and made it a bit better-for-you but first subbing in a whole wheat pasta. I also kicked the sour cream out and used a plain fat-free greek yogurt instead. Stuffed Buffalo Chicken

We are heading off tomorrow for a birthday trip to Vegas with the kiddo turning 13! I can hardly believe that I’ll have a teenager when I get home! With packing and planning for this trip I’ve been on easy mode when it comes to meals lately and this Stuffed Buffalo Chicken is one of those super easy dinners that you can throw together and have ready in no time.

Dinner truly doesn’t get more simple or easy than this Baked Cheesy BBQ Chicken. With just a handful of ingredients you can have the main part of dinner done and ready to go. It’s basic. Simple. Easy. And cheesy! To start this easy dinner off, you mix up some BBQ sauce with a little extra garlic goodness.

After that you marinate, if you have time, and then bake it until it’s almost done. It’s then topped off with cheese, red onion, and some pickled jalapeños to give just a little kick! Air Fryer Breakfast Burrito

This tasty breakfast burrito has been my staple breakfast for a week now so I just had to share it. Usually when I make breakfast burritos the tortilla can end up a bit soggy or wet with all the good stuff I pile into it - namely the fresh pico and cheese. I recently decided to try and put it in the air fryer once it’s all together so that it could, in theory, end up with a slightly firmer outside and an even more gooey cheesy inside. And that’s exactly what I ended up with.

This Air Fryer Breakfast Burrito is as loaded as they come. Bacon, eggs, cheese, pico, jalapeño - oh my! I lightened it up by going with a super low calorie whole wheat and flax tortilla and was anything other than disappointed. I also used pre cooked and crumbled bacon so that I could use less bacon but still get some in every bite…
