Guacamole Wonton Bites

Guacamole makes everything better.

...Right?

If you haven't noticed, I've been a little avocado obsessed lately. And these guacamole wonton bites are no exception. While playing around with wonton wrappers the past couple of weeks, I thought it would be fun to stuff them with something other than the usual. So, I decided to do a little bit of fusion.

I have come to find that wonton skins are the perfect vehicle. They are light and crispy... sort of like a tortilla or a chip, but much more versatile. These handheld little bites of awesome are full of flavor, and it all starts out with a super simple homemade guacamole.

Of course, the guacamole has to be the star of the show. So I kept it rather simple with just avocados, a couple of fresh vegetables, and some seasonings. This is an easy appetizer that is sure to impress and is nearly as fool-proof as you can get.

Mix, fill, bake, enjoy!

These were good enough for me to make a meal out of. Seriously. I ate them for dinner along side some sautéed vegetables and had an easy meatless meal in no time at all.

I was naturally inclined to dip these in a little bit of queso and some added hot sauce. Just because... that's what you do with guacamole anything!

As you can see, my bites opened up a bit during the baking process, even with how well I had them pinched together. So a different sort of fold might be best. Hind-sight is 20/20, you know.

The Skinny:
Servings: 8 • Size: 2 'Bites' • Calories: 117.5 • Fat: 4.8 g • Carb: 16.5 g • Fiber: 2.8 g • Protein: 3 g • Sugar: 0.6 g • Sodium: 512.9 mg

Ingredients:
1 Avocados, Halved-Skinned & Seeded
1/2 Lime, Juiced
1/4 Tsp. Salt
1/4 Tsp. Ground Cumin
1/4 Tsp. Cayenne
1/4 C. Onion, Diced
1/4 Jalapeno, Seeded & Minced
1 Roma Tomato, Seeded & Diced
1 Clove Garlic, Minced
16 (3" Round) Round Wonton Skins

Directions:
Preheat the oven to 350 degrees F. and line a baking sheet with foil; set aside.

Combine all the ingredients (except for the wrappers) into a small bowl and mix until well combined.

Lay out your wonton wrappers and fill with about 1 Tbsp. of the guacamole.

Wet the wrappers around the edge and pinch to seal them off.

I made mine into little star pillow shapes today. But, however you want to do it is fine.

Place the wontons on the prepared baking sheet and place in the oven to bake for about 20 minutes or until the edges are browning and the wontons are crisp.

Remove from the oven and allow to cool slightly.

Enjoy right away!

Mmm! I served mine with some queso and hot sauce!
