Reuben Stuffed Potato Skins

With St. Patricks Day just around the corner, and a pantry full of potatoes that need to reused up relatively soon, I decided to make some reuben inspired potato skins. These Reuben Stuffed Potato Skins take some of the standard parts of a reuben and stuffs them into potato skins that are hearty and filling.

Breakfast Biscuit Pie

Sometimes you just need something a little different to help shake things up a bit and keep life interesting. Especially during this part of the year when we’re all just trying to get through to summer break at this point. This Breakfast Biscuit Pie is made with a lot of the usual breakfast subjects, but in a new and fun way! I would say this Breakfast Biscuit Pie is basically a cross over of a quiche and a breakfast casserole.

We’ve all seen that new tortilla trend that’s been going around, but sometimes a girl just wants to get a little naked. I’ve stripped the tortilla out of this all together and went with a large lettuce leaf instead. This makes this trend low carb, gluten free, and still every bit as delicious. It’s meatless. It’s Monday. It’s a meatless Monday! These Greek Spinach & Feta Veggie Patties are as tricky and as tasty as they come. I made these patties with a vegetarian ground plant-based ‘meat’ which looks like, tastes like, and cooks up just like ground beef. I loaded these quarter pound patties up with spinach, sun-dried tomatoes, and of course some feta cheese to give a little bit of a Greek or Mediterranean twist.
